My Favorite Wheat Free Products For National Celiac Disease Awareness Day

  With over 2 million Americans who have to follow a wheat-free diet, due to food allergies, food sensitivities, and celiac disease, National Celiac Disease Awareness Day is one that deserves a celebration.


 National Celiac Disease Awareness Day is September 13 and this is a day that I will be celebrating. While I am not affected by celiac disease, I will be celebrating this day for a different reason. I will be celebrating this day due to the fact that I have a wheat allergy.

 Like someone who has celiac disease, I too have to avoid all wheat products. Just like a person who is affected by celiac disease, one bite of any food that contains wheat can harm me. I will be celebrating National Celiac Disease Awareness Day, as a way to educate others about why people follow a gluten-free diet. 

What is Celiac Disease?

 Celiac disease is a serious autoimmune disease that occurs in genetically predisposed people where the ingestion of gluten leads to damage in the small intestine. It is estimated to affect 1 in 100 people worldwide, but only about 30% are properly diagnosed.

Shopping for products that are wheat-free can be hard but thanks to Celiac Awareness Day, more companies are producing gluten-free products that taste good. When I select a product that has the gluten-free symbol on it, I know that the product is safe for me to eat. Keep reading to discover some of my favorite gluten-free products.

 When people discover I can't eat wheat, they always reply, "That must be hard, I could never give up bread!" When I discovered that I was allergic to wheat, giving up bread was hard. I was sad that I would never enjoy a slice of bread with butter.

 I have multiple food allergies, wheat, dairy, soy, and mushrooms. My food allergies cause can cause severe asthma symptoms which make breathing difficult. Grocery shopping is a process that requires reading labels for ingredients and finding foods that you can eat can be tough. Finding allergy-friendly food that tastes good is even tougher.

Wheat Allergy Vs Gluten Sensitivity, Knowing The Difference

 Is a wheat allergy the same as gluten intolerance? Is there a difference between an allergy to wheat vs a gluten allergy? The answer may surprise you, keep reading to discover the difference. 


 A gluten allergy is a misleading term commonly confused with wheat allergy, or sometimes celiac disease. There is no such thing as a gluten allergy but there are wheat allergies. The difference between a wheat allergy and gluten intolerance is huge. So how do you know if you have a wheat allergy or need to follow a gluten-free diet?

Most people don't understand the terms gluten-free and wheat allergy. They often think that someone who can't have gluten is allergic to wheat or they think someone who is allergic to wheat must follow a gluten-free diet. The truth is being sensitive to gluten is very different than being allergic to wheat and knowing the difference is important.

Could I be allergic to wheat?

 Most everyone has heard the term gluten-free and knows that people who have to avoid gluten can not eat wheat. People may know that gluten sensitivity may cause stomach distress. The question is "Is a wheat allergy the same as being gluten-free?"

The answer is NO. An intolerance and a food allergy aren’t the same. A food allergy, such as a wheat allergy, is when your immune system overreacts after you eat a certain food. A wheat allergy is way different than a gluten intolerance and knowing some of the common symptoms of both may help you get the proper diagnosis.

Wheat Allergy Symptoms

+ Hives or skin rash

+ Nausea, stomach cramps, indigestion, vomiting or diarrhea

+ Stuffy or runny nose

+ Sneezing

+ Headaches

+ Asthma

+ Anaphylaxis 



 Gluten Intolerance Symptoms

 The above symptoms are some of the ones that most people experience when they have problems eating wheat. If you have any of the above symptoms after eating wheat, you should make an appointment with a doctor. There are allergy tests that can confirm if it is a wheat allergy or celiac disease but the best way to confirm a gluten sensitivity is through an elimination diet.

How I discovered that I had a wheat allergy

 I discovered my wheat allergy through an allergy skin test. I made an appointment with an allergy doctor as I was experiencing severe asthma symptoms. The testing revealed that I was allergic to many things like weeds, plants, pets, dairy, and wheat. 

 The doctor suggested allergy shots and eliminating wheat from my diet. I already knew about my dairy allergy and was not consuming any milk products. The allergy shots and not eating wheat took away my asthma problems.

 Several months later when I ate something with wheat, I had a severe asthma attack. The allergy doctor tested me for a wheat allergy again and it was worse. That reconfirmed my food allergy to wheat.

Treatment for a wheat allergy

 The treatment for a wheat allergy is to avoid eating wheat and anything made with wheat. So reading food labels is important to make sure no wheat is present. Consuming wheat may cause a severe reaction that may be life-threatening for me. Since I have experienced major breathing issues with my food allergies, I also carry an Epi-pen with me. 

Treatment for a gluten sensitivity

The treatment for a gluten issue is to avoid eating gluten. Gluten can be present in wheat and other grains like oatmeal and barley. So eating gluten-free products is important. Eating gluten may cause stomach issues or other symptoms but it is not life-threatening. 

Is gluten-free food safe for those with a wheat allergy?

While gluten-free food may make it easier to shop for food if you have a wheat allergy, you still need to read the ingredients as a product may contain wheat. Advances in food manufacturing have allowed companies to take the gluten out of wheat, making the product gluten-free but the wheat in the product can still cause a severe reaction or allergy for someone who is allergic to wheat.

Food products to avoid with a wheat allergy or gluten issue

The most common food to avoid with either a wheat allergy or gluten problem is anything made with wheat like bread or baked goods. Gluten is also in grains like barley, rye, and sometimes oats. The best thing is to read food labels as wheat is in many things like soy sauce, beer, and processed food. 

 It may be difficult at first to manage your diet with having to be wheat-free but over time it will be easier. 



How To Travel With Food Allergies

 Is it possible to travel when you have food allergies and have to carry an Epipen? Yes, one can travel with food allergies, it just takes some extra planning. Learn how I navigate traveling with multiple food allergies. 


 I love traveling and having multiple food allergies can make traveling difficult at times. A simple thing, like eating while traveling takes planning but I am not going to let that get in my way of exploring new places and having fun. I have many things that I do before my trip to stay safe and avoid the foods that I am allergic to. 

 As I write this article, I am at the airport heading to an event called Expo East. While waiting for my flight, I decided to share with you my tips to safely travel with food allergies. I want to be able to help those who are looking for help navigating the world of travel with food allergies. 

 Expo East is the fall natural products show from New Hope Network. This is a huge event for the natural & organic community to showcase the latest products that are available in stores. The event is all about seeing and trying the latest natural food, beverages, personal care, and supplements.

 I will start by sharing some details about my food issues. I am allergic to dairy, wheat, soy, and mushrooms. My food allergies cause severe asthma attacks so I have to be careful with eating outside of the home. For the most part, I don't eat out at restaurants as I don't feel safe as I have had accidental food allergy exposure several times in the past. 

 So, I bet you are wondering why I would travel to an event where I would be trying food. Expo East is an event where I can learn about food that is allergy-friendly and the brands there are open about the ingredients in the products. While I feel safe attending this natural product event, I still have to take precautions so I don't accidentally eat any of the foods that I am allergic to.

10 Things I do to safely travel with food allergies

1. Pack plenty of allergy-friendly food

When I pack for any trip, I always pack plenty of food that I can eat. That way I don't have to buy food at the airport, that may not be safe for me to eat. I also pack healthy food that I can eat for my meals like breakfast. I like to pack vegan protein powder to eat for my breakfast. I also pack nuts, dried fruit, and granola.

2. Stay at a hotel with a kitchen

 I try to stay at a hotel with a kitchen so I can cook my meals. A hotel with a fridge and a microwave is also a good choice. That way I can stock the fridge with food that I can eat and avoid eating out at restaurants.

3. Shop for food when I get to my destination

 After I check into my hotel, I find out where the nearest grocery store is located. I then go shopping for food that I can cook at the hotel for my meals. Good choices for hotel meals, when you don't have a fridge, are cans of tuna, gluten-free crackers, and fresh fruit. Since my hotel has a kitchen with a fridge and microwave, I will buy plant-based milk, frozen dinners, frozen vegetables, and sushi rolls.

4. Exercise in the morning

 I always start my day with exercise for many reasons. Since I have asthma, exercise helps me clear the mucus from my lungs so I can breathe better. Exercise also is great for my mind and it helps me focus better, so I can manage my food allergies. Since I exercise in the morning, I like to fuel my body with a delicious caffeinated energy bar. The snack bars have caffeine in them from green tea, the same amount as a cup of coffee. The bars give me great energy to get my workout done and I don't experience a sugar crash from them like I did when I drank energy drinks.

5. Eat breakfast

 I always start my day with breakfast at the hotel, that way I don't arrive to the event hungry. I can make better food choices when I am not hungry. For breakfast, I drink a protein shake along with some gluten-free cereal an some fresh fruit. My favorite protein to pack for trips is an allergy-friendly plant-based protein powder. 6. Always carry my emergency medicines

 My number one rule, when traveling with food allergies, is to always carry my emergency medicines. I have a special travel pouch that is made to hold Epipens. This pouch has plenty of room to hold my Benadryl tablets and other medicines that I might need. That way I am prepared for a food allergy exposure if it accidentally happens. 



7. Ask questions

If you have a food allergy, you need to not be afraid to ask questions about the ingredients in the food. Your life depends on not eating the food that you are allergic to. So speak up and ask questions about what is in the food and how the food is prepared. 

 If I do eat out, I choose to eat at places that serve sushi bowls as they, for the most part, do not contain dairy and they serve plenty of gluten-free options. When I am at the event, I try to sample foods that I am familiar with. I also do not eat any of the wrapped samples, until I can read the ingredient list on the package or visit their website to learn more about the food. 

8. Pack snacks

I also pack plenty of snacks in my bag when I am at the event or out site seeing. That way I have something that I know is safe to eat if I get hungry. My favorite snacks to take on the go are packages of nuts, dried fruit, and protein bars. 

9. Know the signs of accidental ingestion of my food allergies

 It is important to know the signs of accidental exposure to a food that you are allergic to. For me, if I accidentally eat something with dairy, soy, mushrooms, or wheat in it, I have an asthmatic cough. My voice may also change. Once I recognize these signs of food allergy exposure, I take 2 Benadryl and a cup of coffee. This helps keep my airway open so I don't experience any breathing problems. If I have breathing problems, then I will use my Epipen. Thankfully, I have not had to use my EpiPen but it comforts me to know that it is there for emergencies. I have only had one anaphylaxis episode from dairy exposure and that is the reason that the doctor prescribed the EpiPen.

10. Use my natural inhaler

 I always carry my natural inhaler with me when I travel. This inhaler helps open up my airway so I can get the mucus out of my lungs after I have an asthma attack. I also pack menthol lozenges in my bag as they help calm my asthmatic cough.

 These are the many ways that I travel safely with my food allergies. Managing food allergies while traveling can be done. It just takes learning what best works for you. I have been managing my food allergies for 5 years and I am still learning. It was discovering my dairy allergy through a food allergy blood test that has helped me learn how to manage my severe asthma symptoms.

 Last month at my allergy doctor appointment, I got the dreadful news that I was still allergic to wheat. As my seasonal allergy symptoms improved from the allergy shot treatment, eating wheat was the only thing to cause me to have breathing problems. So I was tested for wheat again through an allergy skin prick test and the wheat allergy test result came back more severe.


My food allergies include dairy, soy, mushrooms, and wheat. 

 My dreams of eating a homemade piece of honey wheat bread with butter were crushed. I quickly got over my pity party when I realized that not having severe asthma symptoms and being able to sleep again was way better than any slice of bread made with wheat. I was also thankful that there were good-tasting gluten-free bread options available at the store.

2 Ingredients For Oat Tortillas
~ Oatmeal ~ Any type of oats will work ~ rolled, quick, or gluten-free oatmeal

This gluten-free and allergy-friendly recipe requires only 2 ingredients! Oatmeal and water are all you need. Any type of oatmeal will work. I like using rolled oats but instant oatmeal works also. If you have gluten issues, I recommend using gluten-free oatmeal.

Method For Oat Tortillas
~ Measure
~ Soak ~ the oatmeal for 5 minutes
~ Blend ~ the oatmeal in a blender 
~ Cook ~ cook the batter in a pan

The method for making oat tortillas is quite simple. You will need a blender and a frying pan. Simply measure out the oatmeal and add it to the blender. Add water and let the oats soak. Then blend the mixture until smooth, which should resemble a pancake batter. Cook the batter in a frying pan and enjoy.



Add Some Flavor

While these tortillas taste great as they are, you can add some flavor to the batter. Get creative with this oat tortilla recipe and add some flavors to the batter. Experiment with your favorite seasonings. Below are some suggestions.

These tortillas take time to make and the batter may not be the perfect texture. So don't be afraid to make changes if your first tortilla is not perfect. 

+ Add more water ~ If your tortillas are too thick, add 1-2 tablespoons of water to the batter. 

+ Don't rush the cooking time ~ Each tortilla takes close to 10 minutes to cook. If you have an additional skillet, you can have two going at a time to speed up the process.

+ Tortillas breaking apart ~ You may have flipped the tortilla too soon. They take a while to cook fully on one side. Wait until the batter is bubbly and looks somewhat cooked. 

+ Use a non-stick skillet ~ To prevent the batter from sticking use a lightly oiled non-stick skillet.

12 Gluten Free Products That You Need To Try

 Having to eat products that do not contain wheat can be tough. Thankfully there are many gluten-free products that make great substitutes and taste so delicious.


 I recently had to eliminate wheat from my diet due to a possible wheat allergy. Having to be wheat free has not been easy but I am thankful for the many delicious gluten-free products that are available. 

 It was in the year 2021 that I had allergy testing done. My allergy panel results showed that I was allergic to way too many plants, weeds, grass, trees, and wheat. The allergy testing did not show that I was allergic to dairy since I eliminated dairy from my diet in 2018. I did not need confirmation of my dairy allergy as I had discovered through a food allergy blood test that a dairy allergy was the reason for my severe asthma symptoms.

  I thought it was strange that the testing of allergies indicated that I could be allergic to wheat. The doctor said that false positives could happen with food allergy testing but recommended that I eliminate wheat from my diet for 6 weeks to see if it made a difference in my asthma. After 6 weeks of being wheat free in 2021 and then eating wheat products again, it made no difference in my asthma symptoms. 

Allergy shots and a temporary wheat allergy

 A year later, while I was 8 months into the allergy shot build-up phase, my asthma symptoms started to get worse. At first, I thought that this was due to my allergy shot serum getting stronger but the strange thing was I was not having asthma attacks every day. So I decided to keep a food log and discovered it was on the days that I ate wheat, that I had an asthma attack 2 hours after eating food that contained wheat. So I eliminated wheat from my diet and the severe asthma attacks went away. 

 The allergy doctor, says my wheat allergy may be temporary, while I receive the higher doses of my allergy shots, and may go away in June when I am done with the build-up phase of allergy shots. So I have been on a wheat-free diet since November. It has been quite the challenge to be wheat-free in addition to eating no dairy.

 When you have to eat wheat free and want Mexican food, your option is usually corn tortillas. While I like eating corn tortillas, they tend to be stiff and easily break.
