Gluten Free Chocolate Mocha Protein Brownies

Brownies that are delicious and good for you. Unbelievable! These brownies are rich in chocolate flavor and loaded with protein.


  Once in a while, I have a sweet tooth and crave something sweet. Cookies are my weakness and once I allow myself to enjoy a cookie, I tend to eat way too many. So when I make cookies, I try to add some healthy nutrition to them so I can indulge and still do good for my body. My motto is "make every calorie count" as I know I like the way I feel and look when I eat healthy food. Healthy eating does not have to mean no more delicious sweet treats. I still enjoy sweet treats once in a while. I love to make my own baked goods so I can make them with healthy nutrition instead of worthless empty calories that my body will make into fat cells on my belly. I also try to incorporate some protein into my baked goods as protein helps build strength and supports our energy levels. Did you know that protein also plays a part in our moods? Protein is also great for weight control. I make some delicious Mocha brownies that are loaded with protein and a wonderful cream mocha flavor. My brownies also have plenty of fiber, omegas, and a great taste. They have very little fat and sugar so I can indulge and still eat healthily.

   I just received this cool Brownie Pan that allows me to make my brownies even healthier. This brownie pan requires no greasing as it is made with heavy-duty copper-infused non-stick ceramic, so my homemade brownies slide right out of the pan! I really love that it makes each brownie the same size. This pan is super easy to use, I just pour in my batter and insert the grid. Then I bake and lift the brownies out of the pan.                Gluten-Free Chocolate Mocha Protein Brownies
                                   Makes 18 squares 

Ingredients

1 15oz can black beans, rinsed/drained
1/3 cup cocoa powder, unsweetened
4 scoops Nuzest Creamy Cappuccino Clean Lean Protein, 25 grams 
4 tablespoons coconut oil
2 tablespoons chia seeds
2 large eggs or egg substitute 
1/4 cup water
1/4 cup honey
1 teaspoon Nielsen-Massey's Pure Coffee Extract 
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/8 teaspoon salt
1/2 cup chocolate chips

Make these brownies vegan with an egg substitute

Instructions
Preheat the oven to 350 degrees F.
1. Add all of the ingredients, except chocolate chips, into a food processor.
2. Blend until completely smooth, scraping down the sides as needed.
3. Stir in chocolate chips by hand.
4. Spray a 9x 13" baking dish with nonstick cooking spray.
5. Pour the batter into the prepared dish and spread it out evenly.
6. Place the dish in the center of the oven and bake for 30- 45 minutes or until a toothpick inserted in the center comes out clean.
7. Remove the brownies from the oven and let them cool in the pan for 15 minutes.
8. Using the parchment paper, lift the brownies out of the pan and place them on the counter.
