6 Ingredients to Help Your Bread Rise Higher

 I have been out of white flour for a month and I am not able to order any flour online. The only flour that I have to bake bread with is whole wheat flour. While I am thankful for the blessing of having whole wheat flour thanks to a good friend, it has been challenging to bake bread with. My loaves of bread are not rising that well and my wheat bread has been dense. While the bread tastes good and has more nutrition, I am missing that soft bread that white flour has. When I did have all-purpose white flour, I did combine it with wheat flour to make wheat bread and whole wheat pizza crust. In my opinion, whole wheat flour is not a desirable flour to use by itself to bake bread with.

 So I have done some research and have discovered some ingredients that will help my whole wheat flour dough rise better. These ingredients, when combined with yeast, will help my loaves of bread rise better and be less firm. I may even have some delicious soft wheat bread. I have not tried any of these dough enhancers yet but as I do use them in my bread baking, I will update my post.

Ginger - Add 1/4 teaspoon powdered ginger with the water when you are proofing the yeast to help your bread rise higher and fluffier.

Potato water - Next time you boil potatoes, save the water and store it in the fridge. Replace the water in the bread recipe with the potato water. Make sure to heat up the water to 110F.

Potato starch - A 1/4 cup potato starch will help your bread rise better and softer. Add it to your flour mixture.

Wheat gluten - You can buy wheat gluten from online stores that sell flour and this ingredient will help your bread rise better. Substitute 1 tablespoon gluten for 1 tablespoon flour in each cup of flour in the whole wheat bread recipe.

Dry milk powder -Adding 2 tablespoons instant dry milk powder per loaf of bread will help your bread rise higher, stay soft, and hold the moisture longer.

Vitamin C powder - Add 1/8 teaspoon of vitamin C powder per loaf of bread as it will help make the bread sandwich soft.

 One of my favorite things to do on a cold winter day is baking bread. Bread baking in a warm oven on a cold day is so wonderful. The aroma of the bread baking fills the house with a wonderful scent and the oven helps warm the house up. Baking bread is my therapy for a dreary winter day. The benefits of making bread go beyond the reward of a slice of homemade bread.

 I eat store-bought bread as it just does not taste that good to me. Don't get me wrong as I still buy bread for my family for school lunches. While my kids love slices of homemade bread with butter, they prefer the wimpy store-bought bread for their peanut butter sandwiches. My family also uses tortillas for sandwiches. When you live in New Mexico, tortillas are used more often than sandwich bread. So when I make homemade bread, it usually is enjoyed as is or just with butter, vegan butter for this dairy-free girl!

 I have plenty of bread recipes that I enjoy baking. Sometimes I just baking a plain loaf of honey wheat bread and other times, I make a crusty artisan loaf of bread. My favorite loaf of bread is one that has plenty of grains and seeds in it. Then there is my favorite no-knead bread that is loaded with cheese and jalapenos. So when I bake bread, I like to go all out and make unique flavors. My weakness is fresh-baked bread and I enjoy every bite of those carbs. I could never give up carbs as I love bread. To knead or not to knead?

 Most bread yeast bread recipes require you to knead the bread dough. My list does include a no-knead bread that you need to try. This is a process that I quite enjoy. Sticking my hands into bread dough and adding flour while getting an arm workout in is so much fun. On days that I am pressed for time, I will use my bread machine to do the job of kneading the dough. My bread machine comes in handy when I make my homemade pizza dough. Another benefit of a bread machine is allowing it to do the bread rising. Some people also use their bread machine to bake the bread but not me as I like to bake my bread in the oven. That way I can control the shape of the bread.


Ways to proof bread dough

 There are many ways to proof your bread dough. If your oven has a bread proofing setting, then this is the best way to help your bread dough rise. My new oven has a bread proofing setting so I love that my bread dough can rise at the perfect temperature of 80°F – 90°F. Other ways to help your homemade bread dough to rise or proof can be as simple as covering the bowl of bread dough with a towel and setting it by a warm sunny window. You could even use a bread proofing basket. With my old oven, I would place the bread dough inside and turn on the oven for a couple of minutes to warm it up and then I would turn off the oven temperature. This would make the oven a warm spot for bread dough rising. I have also heard of people placing their bowl of bread dough on a warm radiator. If you do a lot of bread baking then you might want to look into a bread proofing box.

Bread pans are a must




 Bread pans are a must for baking bread and I like these Aluminized Steel Loaf Pans as they are the perfect size for a one-pound loaf of bread. These are commercial grade bread pans that do a great job of baking the bread. If you are making artisan bread then I recommend a pizza stone, which is also great for making pizza. A pizza stone will give your artisan bread the crispy crust and it does not limit the shape of your bread. If you want to get really fancy with bread baking and make a loaf of artisan bread with a chewy crust, then I would buy a Cast Iron Covered Dutch Oven. This pan will give amazing results to your bread baking and it is also great for other things like braising and casseroles.


The basic bread baking ingredients

 The main ingredients for making a loaf of bread are flour and yeast. Some people like to use unbleached bread flour while others, like me, prefer all-purpose flour. Just don't make the mistake of using pastry flour like I did once, when I was out of all-purpose flour, as it leaves your bread very dense. When making wheat bread, I like to use a combination of whole-grain wheat flour and all-purpose flour. I like to buy my yeast in bulk as it is a better deal when compared to those individual packages of yeast. I store my yeast in the fridge so it lasts a long time. You can even store your bulk yeast in the freezer. Just make sure to bring the amount of yeast that you need for the bread recipe to room temperature for best baking results. Other ingredients that are needed for bread baking are salt and some type of sweeteners like sugar or honey. The sugar is the food for the yeast that helps the bread rise.


Bread baking requires warm water

 Warm water is needed in bread baking as it wakes up the yeast. If the water is too hot, then it may kill the yeast. The perfect temperature of the warm water is between 105 and 110 F. Some bread bakers can feel the water and know it is the right temperature for yeast and bread proofing. Water at just above the 100-degree mark will stop feeling cool to the touch and will feel comfortably warm - not at all hot. That is so not me and I like to use a kitchen thermometer so I know that the water is at the right temperature. You don't need a fancy bread thermometer as one that you use for cooking meat is just fine.

 The below list is just some of my favorite bread-making recipes. These are the recipes that I have made several times and have made for my friends. The best recipe for beginners would be my honey whole wheat bread. This whole wheat bread is also perfect for sandwiches. All of these bread recipes can be made dairy-free if you have allergies like me. Just use plant-based milk and vegan butter. For the recipes that call for protein powder, I recommend using plain unflavored protein powder. My preferred unflavored protein powder is made by Nuzest. Dairy-free cheese makes all the difference
 Since I wanted the taste of cheese in this bread as it pairs so well with the jalapenos, I used a dairy-free cheddar style cheese so this bread is great for a plant-based or vegan diet. I also used sweet and mild jalapenos for just a small bit of heat. The sweet jalapenos add a wonderful spicy, sweet taste to the bread. If you want a spicier bread then make sure to use hot jalapenos. This bread is so full of flavor that it needs no dairy-free butter spread. I like to slice off a thick slice of the bread and warm it up. This bread would be the perfect base for any sandwich.

A roasting pan makes a perfect bread pan
 I decided to bake my bread in a roasting pan as I did not have a Dutch oven. I love using this unique roasting pan for my Chipotle Roasted Cauliflower as it caramelizes the cauliflower for a great taste. You have to try my cauliflower recipe as roasting the cauliflower gives it an amazing sweet taste that even my picky husband can not resist. This pan is an oval shape so it gave my bread a nice shape. I also love how easy this pan is to clean as it has a non-stick finish.

Tip: Line the Dutch oven with parchment paper for easy removal and cleanup. ~ I love the price of this 200-sheet pack of parchment paper.

The dough needs to rise for 12-18 hours
 Since this is a no-knead bread it needs to rise for at least 12 hours in a warm, draft-free spot. I like to make the dough at night and then place it in my oven. I turn on the oven light as this makes the oven the perfect warm spot for the dough to rise. Just make sure the oven is turned off and the oven door is closed.


A different way to make artisan bread
 This unique recipe is simply a different way to make artisan bread. The covered pan gives the bread a wonderful crispy crust and helps the bread to keep its shape. This bread has a delightfully chewy texture also. Since this is a no-knead bread that makes this bread so easy to make. No-Knead Dairy Free Jalapeno Cheeze Artisan Bread

This bread has the perfect amount of heat and sweetness to satisfy your cravings. Cooking it in a dutch oven or roasting pan makes the crust extra crispy and golden brown.

ingredients:

  • 3 cups all-purpose flour
  • 1/2 teaspoon yeast
  • 2 teaspoons sea salt
  • 1 1/2 cups dairy-free cheese
  • 1/2 cup sliced pickled jalapenos (or more, if you wish!)
  • 1 1/2 cups water at room temperature

instructions

  1. Divide the flour into two bowls. In one bowl of flour stir in the yeast. In the bowl of flour, stir in the salt.
  2. Then pour both bowls of flour into a large bowl and stir a couple of times.
  3. Add the dairy-free cheese and sliced jalapenos to the dry ingredients in the large bowl and stir well until combined
  4. Pour in the water, making sure it is at room temperature. Too hot or too cold of water will cause the yeast to be killed or not work. Stir the dough up well. The dough will be rough and sticky, but that is normal.
  5. Once the dough is well combined, cover the bowl with plastic wrap. Since this is a no-knead dough, it will look very sticky.
  6. Place the bowl in a warm, draft-free spot and let it rise for 12-18 hours. Yes, the dough needs a long time to rise. I like to put my dough in the oven with the oven light on. Make sure the oven is turned off.
  7. After the dough has risen for 12-18 hours, place a piece of parchment paper on the counter and dust it with flour. Rub flour on your hands and pull all the dough out of the bowl. It will not feel like regular bread dough. Form your dough into a circle or the shape of your roasting pan/dutch oven. It is fine if the dough looks messy and this will give your bread a rustic look.
  8. Sprinkle your formed loaf with flour and loosely cover with plastic wrap. Let the dough rise for 45 minutes.
  9. While the dough is rising, place your dutch oven or roasting pan (without the lid) in the oven set at 450F to preheat.
  10. Once 45 minutes have passed remove the plastic wrap from the dough. If your dough does not look it rose much, don't worry as it will rise as it cooks.
  11. Remove your pan from the oven, it will be hot so use oven mitts and place on a heat-safe surface. Carefully pick up your formed dough by the parchment paper and gently place into the heated pan.
  12. Place the lid on the pan and return it to the oven for 30 minutes. Don't open the oven during this time, or take the lid off the pot, you need the steam to build up to form the crispy crust.
  13.  After 30 minutes, remove the lid from the pan and bake the bread for 15 more minutes.
  14. Remove the pan from the oven and place on a wire rack to cool.
  15.  Let the bread cool completely before removing from the pan. Also, do not slice it until cooled.

Honey Whole Wheat Bread For School Lunches

This Honey Whole Wheat Bread is amazing for sandwiches. It is the best homemade wheat bread ever! Soft and sliceable.


  My kids are attending a new school this year, and this school does not have free breakfast and lunch. So that means that the boys are now eating breakfast at home and packing their lunches. While I am happy that they are now eating more nutritious foods, I am not happy with my grocery bill going up.

 One of the items that I have been buying way more of is sandwich bread, and I don't like the price of whole wheat bread. My boys love peanut butter sandwiches and are eating them for breakfast and lunch, so that means I am buying three loaves of bread a week. I have tried to give them ideas on packing other things in their lunches or eating oatmeal for breakfast, but they just want PB & J sandwiches. I am not going to complain as they are packing their own lunches and making their own breakfast. 

One less job for me is always a good thing. It is also teaching them how to be more independent. I know that they will eat their lunch at school as they packed the items they like to eat. They just have to follow my guidelines when packing their lunch. That means they need to pack fruit, milk, a protein source, and a whole grain option. I also let them pack a healthy granola bar, protein bar, or chickpea chips in their lunch box for an afternoon snack.


Homemade Honey Whole Wheat Bread

 My family gets excited when I make homemade bread. The smell of fresh bread cooking in the oven is an amazing scent. Homemade bread is so delicious and way better than the bread you buy in the store. When you bake bread from scratch, it is better for you as there are no preservatives in the bread. Love using my bread machine

 I love using my bread machine when making bread as it does all the mixing, kneading, and rising for me. I rarely, if ever, use the bread machine for baking bread, as my family does not like those weird-looking loaves of bread. I also find that the bread machine dries the bread out when I use it for baking. So I always take the dough out of the machine and bake it in the oven in my bread pans. The bread machine is also great for pizza, as it makes awesome pizza dough.

  • 1 1/2 cups whole wheat flour
  • 1 1/2 cups bread flour

  • 1 1/2 teaspoons instant yeast

Instructions:

  1.  To make the bread in a bread machine: put all the ingredients bread pan in the order listed. Program the bread machine for dough and press start, as you only want the machine to do the mixing and rising. The bread will be baked in the oven. Skip to step # 4 when the bread is done rising.
  2. To make bread by hand: Mix all of the ingredients in a large bowl, or in the bowl of a stand mixer.
  3.  Knead the dough until it's smooth and just slightly tacky, about 8 to 10 minutes. Place the dough in a greased bowl, cover with a clean towel or plastic wrap, and let it rise until doubled in volume in a warm spot, about 1 to 1 1/2 hours.
  4. Once your bread is done rising, gently deflate the dough and shape it to fit a greased 8 1/2" x 4 1/2" loaf pan. Let it rise, covered, until doubled, about 1 to 1 1/2 hours.
  5. Bake the bread in a preheated 375°F oven for 35 minutes, or until a digital thermometer inserted in the center of the loaf reads 190°F. Remove the bread from the oven, remove it from the pan, and cool on a rack.

 I made the boys Honey Whole Wheat Bread last week so I decided to make a loaf of bread that I would enjoy. When I make bread, I love adding lots of flavor and seeds to it. I made this bread along with honey wheat bread on the same day and followed the same recipe, except for adding the protein powder and everything spice. This one rose so much more. The salt and garlic in the bread also give great texture too. I love eating this high-protein bread with over-easy eggs and sliced avocado. I just place the eggs and avocado on top of a slice of bread and it is so delicious. I sometimes sprinkle more Everything Spice on top of the eggs! This bread also makes amazing sandwiches too.
