Chipotle Roasted Cauliflower With Smoked Chili Cream

  My husband loves to grill so this Father's day the boys will get some grill-worthy cuts of meat like steak or pork for their dad. While my husband is marinating the meat, I will roast a whole cauliflower in the oven, as I am not allowed near the grill. I usually roast my veggies on a baking sheet but for whole cauliflower, I like to roast it in a Swiss Diamond roaster so the sauce that I use can make a great glaze. I am talking a gooey glaze that sticks to the bottom of the whole cauliflower. This roaster makes a caramelized glaze on the bottom of the cauliflower. A roaster pan keeps the glaze around the cauliflower and makes the vegetable look like a braised piece of meat.

 When I selected this Swiss Diamond Roaster, I thought about using it to make a pot roast or pulled pork for my husband for Father's Day but my husband wanted to grill. I still wanted to try out this unique non-stick roaster that made a great Father's Day gift for my husband so I decided to make a drool-worthy appetizer in this "Rolls-Royce" of nonstick roasting pans. I just had to see how this unique pan performs.


What makes this roaster so unique?

What about cooking?

 This roaster will not only roast my whole cauliflower but will comfortably fit a 6-8 lb. roast. My husband who enjoys cooking will love that he can sear his meat on the stovetop and then place the roaster pan into the oven (up to 500°F). He can even use the same pan to make his gravy! The roaster even has a heat-tempered glass lid with an adjustable steam vent for advanced moisture control. So my husband can brown or braise in this Swiss Diamond XD coated pan.


On to the drool-worthy recipe!

  If you came to my website for a delicious recipe to make on Father's Day, you are in the right place. My whole roasted cauliflower is a delicious healthy recipe that is loaded with an awesome smoky chipotle chili flavor. To get this wonderful flavor, I use a spice blend that combines Chipotle Peppers with brown sugar, garlic, paprika, and other amazing spices. The Swiss Diamond roaster pan makes an amazing whole roasted cauliflower. This pan takes the glaze that I made with the spices and the oil and carmelizes it on the bottom of the cauliflower. It also helps the delicious flavor absorb into the cauliflower for great intense flavor. If you want the delicious caramelized glaze on the top of the cauliflower, just turn it over halfway through the cooking. I love using this spice blend on veggies, fiber-rich whole grains, and sauces like the Smoked Chili Cream that you can either drizzle over the roasted cauliflower or dip the pieces into.


Chipotle Roasted Cauliflower With Smoked Chili Cream

Ingredients
1 head cauliflower, medium to large-sized
4 Tbsp olive oil
3 teaspoons Chipotle Seasoning

Preheat oven to 400 degrees.

Trim the leaves and stems from the underside of the cauliflower and cut the bottom stem even with the florets so that the cauliflower sits flat.
Stir together the olive oil and Chipotle Seasoning. Place the whole cauliflower head into the Swiss Diamond roaster. Begin by brushing the bottom side of the cauliflower with the seasoned oil. Turn the head over and brush the top and sides with the seasoned oil. Pour any remaining oil into the pan.
Bake for 50–60 minutes, basting the cauliflower with the oil in the pan every 15 minutes. If you want the top of the cauliflower to have a caramelized topping then turn the cauliflower over about halfway through the cooking process. The cauliflower is done when the center of the cauliflower is tender when pierced with a knife and the exterior is golden brown.
Slice into wedges and serve with the Smoked Chili Cream.


Smoked Chili Cream

Ingredients
8 ounces full-fat Greek yogurt
2 teaspoons Chipotle Seasoning
1 tsp. extra-virgin olive oil
1 tsp. honey

Sea salt and black pepper

Combine all the ingredients until smooth. Add more honey or spices to taste. Serve this delicious smoky cream with the roasted cauliflower. You can drizzle it over the cauliflower or dip the cauliflower pieces into it.
