Coconut Protein Chocolate Chip Cookies

I received several products from Carrington, T-fal, and Krups to facilitate this post.

My whole family enjoyed these delicious chocolate chip cookies.


  I found this recipe on the Carrington Farms website and I love all the healthy ingredients in it. The added protein powder from the coconut protein blend is a plus. These cookies have a wonderfully soft texture and plenty of flavor. The use of wheat flour adds some nutrition and the milled flax is loaded with omegas. I accidentally used kosher salt instead of regular salt and this made the cookies taste like salted chocolate. I think from now on I will use kosher salt in my chocolate recipes as I love salted chocolate.

This recipe gave me a chance to try out the new mixer that I just got! This KRUPS' 10 Speed Hand Mixer helped me mix up my ingredients so quickly.  I just love that all the attachments store in a container that attaches to the mixer! No more having to find the beaters when I want to use my mixer!


Love baking on this T-fal AirBake Cookie Sheet! I get better browning, decreased bake times, and practically NO BURNING.



Coconut Protein Chocolate Chip Cookies

INGREDIENTS
  • ½ cup Cane Sugar
  • 2 Tablespoon Water
  • 2 teaspoons Molasses
  • 1¼ cup Whole Wheat Pastry Flour
  • ¾ teaspoon Baking Soda
  • ¼ teaspoon Salt
  • ½ cup Chocolate Chips

DIRECTIONS
  1. Preheat oven to 370 degrees.
  1. In a large mixing bowl, cream together ghee and sugar until creamy, about 2 minutes.
  1. In a small bowl, mix together ground flax seeds and water. Let sit for 1-2 minutes. Add to butter-sugar mixture and mix. Add molasses and stir.
  1. Stir in protein powder, whole wheat pastry flour, baking soda, salt. Mix until just combined, avoid overmixing. Stir in chocolate chips.
  1. Using parchment paper or Silpat silicone baking sheets, cover the baking sheet. Divide dough into balls. Press down on dough to flatten. Make sure that each cookie has enough room to spread.
  1. Bake at 9-11 minutes or until golden brown on edges but still soft.
  1. Let cool for 5-10 minutes before eating.                                         





Quinoa & Bean Veggie Burger Recipe

    
These veggie burgers have awesome flavor and are a frugal meal idea!



 One of my favorite meals is a veggie burger. I like my veggie burger to have great texture and it has to have flavor. One thing that I don't care for in a veggie burger is one that resembles/tastes like ground beef. It just has to have a great mouth appeal and texture. This recipe has not only a great texture but it also has great flavor from the spices and nutritional yeast. This veggie burger is awesome on a toasted bun with your favorite toppings. This veggie burger is a great meatless option that is also vegan. Think meatless Monday meal idea!

 The main ingredient in these veggie burgers is probably sitting in your pantry. The ingredient that I am talking about is quinoa. Most people, including me, find the grain quinoa quite boring if not tasty. Sure quinoa is a healthy grain that is loaded with protein but it tends to lack flavor and texture when served by itself. I know I joined the quinoa craze and bought several bags of this ancient grain, only to find out that my family did not like it. So being the frugal person that I am, I just left that bag of quinoa grain sit in my pantry.


 Once I discovered this Quinoa & Bean Veggie Burger recipe, I was glad that I had quinoa in my pantry to use. Quinoa is easy to cook and it does not take that long to cook. Quinoa is gluten-free and is a plant-based ingredient. So these delicious burgers are vegan and dairy-free. You can top the burgers with cheese and then they will be a vegetarian meal.


 So easy to make

 These plant-based burgers are so easy to make and use many frugal ingredients like white beans and spices. The burgers can be made in the oven or on the stovetop. The vegan burgers are great for a family meal. Just serve them on buns with your favorite burger toppings like tomatoes, lettuce, avocado, and ketchup. This recipe makes four veggie burgers but can easily be doubled. The vegetarian burgers can be stored in the fridge for a couple of days so they are ready for quick healthy lunches.


 This meatless burger uses a flax meal egg instead of a real egg. If you don't have any flax meal, you can grind up some flax seeds or swap out chia seeds. I love using chia seeds for vegan eggs. Quinoa & Bean Veggie Burger

Ingredients (makes 4 patties)

1/2 cup quinoa
1 cup water
1 teaspoon garlic powder
3 teaspoons thyme
1 teaspoon rosemary
1 can white beans, 15-ounce, drained and rinsed
1 small onion, diced
2 tablespoons nutritional yeast
2 tablespoons soy sauce
 1 flax egg (1 Tbs flaxseed meal + 3 Tbs water)
2-3 tablespoons water if needed
 salt & cracked pepper, to taste
 coconut oil for frying

Make your flaxseed egg by combining the flaxseed meal and water in a small bowl, set aside.

In a medium pot, bring water, quinoa, garlic powder, thyme, and rosemary to a boil. Cover, reduce heat and simmer for 15 minutes. Once done, remove the cover and let it rest for 10 minutes.

While quinoa is cooking, saute the diced onion in a frypan until lightly brown.

Mash the white beans in a large bowl. Then add the cooked quinoa and sauteed onion, mix well. Add the nutritional yeast, soy sauce, and the flax egg along with salt and pepper to your taste, mix well. If the mixture seems too dry, add more water, 1 tablespoon at a time. The mixture should be moist like clay.

Divide the mixture to form four patties. Form the patties by taking each section and packing it tightly into a ball. Then flatten with your hands to make the patties.

Cook one of two ways:

1. In the oven at 375 degrees on a greased or parchment-lined cookie sheet for 30 minutes, turning once after 15 minutes.

OR

2. In a large skillet, heat 1 tablespoon Ghee or coconut oil over medium to medium-high heat. Cook patties about 4 – 5 minutes on each side.

Easy Chocolate Mint Mousse Brownies


These brownies are so rich and creamy but so easy to make!


This is what I made my sweetheart for Valentine's Day. This is so easy to make and you probably have most of the ingredients in your pantry. The main ingredients are a brownie mix, chocolate chips, and frosting. I love that you can make a different taste by using different flavors of chocolate chips and frosting. I love that this recipe uses a brownie mix and a container of frosting. These mousse brownies are so creamy and rich. A small slice will be enough to satisfy your craving for chocolate. This recipe is not dairy-free or gluten-free so I could not enjoy a slice but I decided to make a dairy-free dessert so I could indulge with my husband. My family just loves my Dairy-free Chocolate Pretzel Pie that I made last Christmas.


 The original recipe for these mint mousse brownies was for Raspberry Mousse Brownies and I found this recipe at Bettycrocker.com but I made a few changes as I had mint chocolate chips. To make a different flavor you can use different flavor chocolate chips. Use cream cheese frosting with white chocolate chips for a white chocolate mousse or how about milk chocolate chips and milk chocolate frosting.

Easy Chocolate Mint Mousse Brownies
Yield: 12-24 Depending On The Size Of Slices

ingredients:

  • 1 box (1 lb 2.4 oz) brownie mix
  • Water, vegetable oil, and egg called for on brownie mix box
  • 1 cup dark chocolate and mint chips
  • 3/4 cup whipping cream
  • 1 cup chocolate frosting (from 16 oz container)
  • 1 1/2 teaspoons whipping cream
  • 2 tablespoons mint chocolate chips for the drizzle on top

How to cook Easy Chocolate Mint Mousse Brownies

  1. Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom only of 8-inch or 9-inch square pan with cooking spray or shortening. (For easier cutting, line pan with foil, then grease foil on bottom only of the pan). Make brownies as directed on the box. Cool completely, about 1 1/2 hours.
  2. In a medium microwavable bowl, place chocolate chips and 3/4 cup whipping cream Microwave uncovered on High 2 to 3 minutes, stirring once every minute, until chocolate is melted. Stir until the mixture is smooth. Refrigerate about 30 minutes or until slightly thickened.
  3. Add frosting to chocolate mixture. Beat with electric mixer on high speed 1 to 2 minutes or until well blended and fluffy. Spread over cooled brownies, smoothing top.
  4. In a small microwavable bowl, microwave the 2 tablespoons chocolate chips and 1 1/2 teaspoons whipping cream uncovered on High 30 to 45 seconds, stirring once, until mixture can be stirred smooth. Stir in a few additional drops of whipping cream to thin chocolate, if necessary. Drizzle over frosting mixture. Refrigerate 1 to 2 hours or until set.
  5. Cut into 9 squares; cut each square diagonally in half to make triangles

Cake Pop Truffle Balls


Yesterday was son # 3 birthday and I wanted to make something special for him on his 7th birthday. I have seen all those cool cake pop pictures so I decided to make some. I did not have any sticks so I made mine without. I never realized how easy this are to make but they do take some time to make them. All you need is prepared cake from a box, a can of frosting, a bag of white chocolate chips, and sprinkles. I used chocolate cake and frosting but other flavors will work too.
The first step is to make the cake according to the box directions and let it cool.


 Then you crumble the cake in a bowl into fine crumbs.


 Add 3/4 of the frosting to the cake crumbs and mix with your hands until very moist. This is messy but will feel like playdough.



Then chill the dough for 30 minutes so it is easier to work with. For the next step, line two baking sheets with wax paper or silicon sheets. using your hands roll the dough into balls and place on the baking sheets.


After all the dough is rolled, melt your chocolate in the microwave. Place the chocolate in a glass microwave bowl and cook on high for a minute, stir and cook for 30 more second intervals until melted. Now the fun part, place the dough ball into the melted chocolate and spoon the melted chocolate over it. Using the spoon, place the ball onto the wax paper and sprinkle with sprinkles. 






Then let the cake pop truffle balls cool and harden. Store them in the fridge. These are so yummy and worth the time to make. What flavor combination will you be making?

 I love making my husband a sweet treat for Valentine’s Day.  I love baking him a treat instead of buying something as he enjoys my baking. The hot chocolate melts the marshmallows into a sweet treat. This delicious drink makes a great treat for Valentine’s day. My husband and I like to enjoy our mugs of sweet hot white chocolate with my delicious chocolate mousse brownies. We have this treat after the kids go to bed. It is our fun way to celebrate Valentine’s Day. Of course, I will share any leftovers brownies with the kids the next day.

Valentine’s Day White Peppermint Hot Chocolate
1 cup coconut or cashew milk
½  cup peppermint white chocolate chips or white chocolate chips
Gourmet Flavored marshmallows 
Sprinkles

Heat the cup of milk in the microwave for about 2 minutes. Stir in the white chocolate chips until melted. Top with the marshmallow and sprinkle the sprinkles on top.
