I love whole grains as they are so good for you and loaded with nutrition. One of my favorite whole grains is millet. Millet is a gluten-free whole grain that is loaded with fiber, protein, and iron. It has a taste similar to brown rice and makes a yummy side dish. I had a package of sugar snap peas in my freezer that I wanted to use so I made this yummy dish with them. You can use fresh sugar snap peas too but I used frozen as that is what I had.
Sugar Snap Peas With Millet
2 cups water
1 teaspoon salt
1/2 cup uncooked millet
2 teaspoons vegetable oil
1 teaspoon garlic powder
12 ounces frozen sugar snap peas thawed or two cups fresh
1 tablespoon soy sauce
1 tablespoon black sesame seeds
Bring the water and salt to a boil in a medium saucepan. Add the millet, cover and simmer for 40 minutes.
Combine the oil and garlic powder together. Heat a large skillet or wok over medium-high heat and add the oil. Saute the sugar snap peas in the skillet for about 2 minutes. If using fresh sugar snap peas, saute them a little longer. Then add the millet, soy sauce, and sesame seeds. Combine until mixed. Place in a serving dish and sprinkle more sesame seeds over the mixture if desired. Serves 4. This is great for a side dish with fish or chicken.

I'm not really familiar with millet...I keep hearing about it, but haven't had it before. I love sugar snap peas though...they taste really good!
