Going gluten-free no longer means going hungry as there is such a wide variety of products available. Many years ago it was hard to find gluten-free products in grocery stores and the ones that were available lacked flavor. That meant people who could not eat gluten had to give up many of their favorite foods. Now that more companies are aware of the need for gluten-free products, it is so much easier to find gluten-free products that taste good.
To celebrate National Gluten-free Day- January 13th, I decided to eat only gluten-free foods for a whole day. While I don't have any gluten issues, many of my friends do so I wanted to share some gluten-free products that I discovered. These are all products that I enjoy eating and many of them are also very healthy. I incorporated many of the products into my day of eating gluten-free and others I will be using in future recipes.
My gluten-free day started with a delicious vegan lemon coconut protein bar. This protein bar not only had lots of protein in it but also gave me some digestion support with a wonderful fermented protein blend. The lemon flavor was so delicious and I really loved that it had flakes of coconut on it. I really liked that this bar was made with all natural ingredients and had no artificial colors or flavors. The 10 grams of fiber was a plus for me so it kept me full until lunch. This protein bar was made by Genuine Health. The protein bars come in other delicious flavors. I will be enjoying these protein bars for snacks also and they will be great for eating healthy while traveling as these tasty bars can replace a meal. I found these gluten-free bars at Sprouts. For lunch, I had a tasty kale and quinoa cake that was loaded with veggies. Garden Lites® Superfood Veggie Cakes contained healthy natural ingredients like veggies, quinoa, egg whites, and spices. I really like that these gluten-free cakes were packed with nutrient-rich superfood veggies like kale and only had 90 calories each! Since they are meant to be a snack or side dish, they only had 3 grams of protein in them. So I also ate some scrambled eggs and broccoli with them. These tasty veggie cakes are also dairy and nut-free.

My afternoon snack was another tasty product from Garden Lites®. I enjoyed a decadent chocolate gluten-free muffin that had hidden veggies in it. My boys enjoyed the chocolate muffins with me and they had no idea that there were carrots and zucchini in them. All my boys knew was they were enjoying a chocolate muffin, as this mom was not revealing her secret way of getting them to eat veggies. These delicious chocolate muffins had only 120 calories, 4 grams of protein, and 3 grams of fiber along with vitamin A, iron, and calcium. The muffins were made with natural ingredients and were also nut and dairy free. Garden Lites sells many other gluten-free items.
For dinner, I made gluten-free chicken nuggets and gluten-free fish sticks. These tasty fish and chicken items from Ian's were made with simple ingredients and contained no trans fats, no added hormones or antibiotics! My family was happy to see meat on the table. This mom felt good about serving them meat that had no hormones or antibiotics in them. In fact, my husband said "these taste great for being gluten-free. You should buy these more often." I really like the way Ian's labels their boxes so I could see right away which allergy items were not in the product. Since these items had no nuts or dairy in them, I could serve them to my daughter when she comes to visit. I also served carrots and brown rice with the fish sticks and chicken nuggets. My boys love these fruit snacks and I am pleased that they are gluten-free. That means they are a good option to bring to give out in Valentine cards. Welch's Fruit Snacks are a classic favorite that is Fat-Free, Gluten-Free and contain no preservatives. I love that fruit is at the top of the ingredient list. The Fruit Rolls were new to my boys and they were excited to try all three flavors: Berry, Tropical Punch, and White Grape Strawberry.
The boys have enjoyed Go Organically Fruit Snacks before and this mom loves that this gluten-free snack is also organic. My boys love all three flavors: Fruit Medley, Mixed Berry, and Tropical.
I have baked with Carrington chia seeds before and I am excited to try these other products in my baking. The chia and flax seed blends are perfect for adding a protein punch to smoothies, oatmeal, yogurt, and my baking. I have never baked with coconut flour so the Carrington Farms Organic Coconut Protein Blend will be a great way to add protein and fiber to my baked goods as it contains 20g of protein and 8g of fiber per serving. The Carrington Farms line of Paks will be awesome for my upcoming traveling so I can sprinkle them on the yogurt that I get at the hotel breakfast buffet.
