I don't what it is about kids and vegetables. I just don't understand why they don't want to eat their veggies and I love vegetables. Lately, my boys don't want to eat their vegetables and it has been a struggle to get them to eat even a carrot stick. My youngest son used to love chomping on raw broccoli and cauliflower but now those are not his favorite foods anymore. My older son has never really liked eating vegetables and even fruits. I think with this son, it has something to do with the texture or how long it takes to chew the food. My husband is really not a vegetable eater so maybe that has something do with my boys not wanting to eat vegetables. I don't want to get into food battles with my boys so I let them choose either a fruit or vegetable with their meal and just stock the house with healthy nourishing food.
For the most part, my boys, eat a healthy diet and as they get older, they are liking more foods like salmon and beans. So I continue to make roasted vegetables and add veggies to things like soups in hopes that my boys will enjoy them. My husband loves when I roast veggies as it brings out a sweetness to the veggies. I think my favorite veggie is brussels sprouts and these little cabbages taste amazing in my Roasted Rainbow Brussels Sprouts recipe and even my Maple-Roasted Brussels Sprouts With Pumpkin Seeds appeals to people who don't like brussels sprouts. I am always eating veggies so maybe one day my boys will enjoy them. I think I am getting closer to my boys wanting to try more veggies as the other day I made a sweet potato and my older son, commented on how good it smelled but he still would not try a piece of sweet potato. Maybe one day these two boys will be like their older brother who started eating more veggies as a teen as a way to help with his athletic performance. When my older son comes home from college, he always adds broccoli and cauliflower to the shopping list.
Make vegetable fun and tasty
The other day my older son was joking around with me that he wanted dinosaur chicken nuggets. He knew that I was not going to buy them as I prefer the boys not to eat meat as I don't like all the hormones and antibiotics in meat. I like my boys to eat mostly plant-based foods with fish once in a while. While they don't follow a mostly vegan diet like me, they, for the most part, eat a vegetarian diet most days of the week. So I decided to try a new dr. Praeger’s vegetable product that was shaped like animals like dinosaurs to see if that would encourage my son to try some new veggies like spinach.

My boys thought it was cool that dr. Praeger’s Sensible Foods® Spinach Littles® were shaped like dinos, stars, and teddy bears and were willing to try them. I told the boys that they had potatoes in them so they were like potato cakes. I liked that the fun vegetable shapes had protein in them so they would make a healthy afterschool snack that my boys could make in the toaster oven. These Little's would be an afterschool snack that kids will eat. My boy's favorite dr. Praeger's Littles was the Broccoli Littles and they said: "These taste good and you can't taste the broccoli." My favorite Littles was the Spinach Littles as I love spinach and the fun dino shape just made them taste better. Each flavor of Littles comes in all the fun shapes, so your kids can munch on teddy bears, stars, and dinos.
The dr. Praeger's Littles would taste great with some ketchup and I could see my granddaughter having fun dipping the animal shapes into her ketchup. Ketchup always makes food fun for kids. I love that these fun veggie cakes are packed with veggies like spinach, broccoli, kale, and sweet potatoes. Since they have no dairy in them, I can enjoy them too. These delicious veggie snacks also are gluten-free and soy-free. The non-GMO Littles have no artificial ingredients, no artificial colors, and no preservatives. These really are a yummy way to so kids that it is easy to be green and enjoy eating their veggies.
