I love using unique ingredients and when I won a gift card to Bob's Red Mill. I bought some blue cornmeal. I thought the color would be cool to make something with. Bob's Red Mill's blue cornmeal is actually blue in color but tastes like regular corn meal. Here is their wonderful description

Just look at the beautiful color of the cornmeal.
I decided to make spicy cornmeal muffins with the blue cornmeal. Here in New Mexico, we love green chile in everything. So I made a basic cornmeal muffin and added green chile and tomatoes to the mix along with mozzarella cheese. I usually add fresh green chile but I had none so I had to use a canned mixture.
Blue Cornmeal Muffins with a Kick
1 cup flour
1 cup Bob's Red Mill blue cornmeal
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 egg
1/4 cup honey
1 tablespoon vegetable oil
1 cup milk
1 cup shredded mozzarella cheese
1 can diced tomatoes with green chilies(drained)
Preheat oven to 400 degrees and grease 12 muffin tins.
Whisk all dry ingredients and set aside.
Beat the egg, sugar, oil, and milk in a mixing bowl until smooth. Add dry ingredients and mix until combined. Mix in cheese and tomatoes until combined.
Spoon batter into muffin tin about 2/3 full. Bake 15 minutes until a toothpick comes out clean. Cool 10 minutes and then remove from tins.
Enjoy the muffins as they are or make a meal of them with beans, veggies, and cheese on top of them.
