I have found a yummy way to make pizza gluten-free. I have seen posts about this pizza on Facebook and I just had to try it. I am not gluten sensitive, but this pizza is so much healthier than regular pizza so that made me want to try it. This Cauliflower Cheese Pizza tastes great, even my husband liked it and he is not a vegetable kind of guy. The recipe may sound like a lot of work but it really is not when you compare it to making pizza dough. Trust me, you have to try it.
This pizza uses a head of cauliflower
Use a food processor to turn the cauliflower into rice texture
I love using these silicone oven gloves to squeeze the liquid out of the cauliflower, no need to wait for it to cool down.
When all the liquid is squeezed out of the cauliflower it looks like this.

Cauliflower cheese pizza after it is cooked
Cauliflower Cheese Pizza
ingredients
oven 425F
one head of cauliflower
2 eggs
1 cup of shredded mozzarella cheese
1 teaspoon dried Italian seasoning
1 teaspoon garlic powder
1 cup shredded mozzarella cheese
12 oven dried tomato slices (see link at bottom)
Wash and cut cauliflower into pieces. Place cauliflower in food processor and process until it looks like rice. Place the cauliflower meal in a microwave dish and cook on high for 10 minutes. Let the cauliflower cool and then wrap it in a cheesecloth or a nut milk bag. Holding by the four corners of cheesecloth with one hand, squeeze out the liquid as much as you can from the cauliflower with the other hand. Place the cauliflower in a bowl and add the eggs, 1 cup of cheese, Italian seasoning, and garlic powder. Mix well and then spread the mixture on a cookie sheet that is covered with a silicone baking mat or parchment paper. Bake for 20 minutes. Then place the tomato slices on the pizza and sprinkle with the other cup of cheese. Bake for an additional 5 minutes or until cheese melted. Cut into slices and serve with pizza sauce. Makes 12 square slices.

That pizza actually looks really delicious to me. I'm not allergic to gluten, but I think one of my daughter's might be and she LOVES pizza, so I've definitely got to try this one. Thanks for sharing!
