Chocolate Pumpkin Bread Made With Candy

Check out a great way to use up Holiday candy.



   I love buying candy after the holidays. Some holidays, like Halloween, you can get the candy for 70% off.  When I find chocolate candy at great prices, I stock up and freeze it. Chocolate candy freezes very well and still tastes great. The other day I found Halloween M&M's from at least five years ago in my freezer and they still tasted good. My favorite way to enjoy my frozen chocolate stash is in recipes like cookies and quick bread. The best chocolate to stock up for recipes is M&M's, Kisses, and other solid chocolate pieces. My husband likes chocolate chip pumpkin bread so I decided to make him some with the Halloween M&M's that I found in my freezer. The M&M's gave the pumpkin bread a wonderful taste and since the pieces were orange and black it blended it so well with the pumpkin bread.


Chocolate Pumpkin Bread Made With Candy
Makes one loaf

Ingredients
1 1/2 cups flour
2/3 cup oatmeal
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 egg
1 egg white
1/ cup brown sugar
1/4 cup sugar
2 tablespoons vegetable oil
1/3 cup milk
1 1/2 cups pumpkin puree
1/2 cup M&M's, plain

Instructions
Preheat oven to 350 F and coat a loaf with nonstick spray.
Wisk the flour, oats, baking powder, baking soda, cinnamon, and salt and set aside.
Beat the eggs, sugars, and oil until smooth. Add the milk and pumpkin puree and beat again. Stir in the flour mixture and combine well. Then add the M&M's and combine well. Scrape the batter into the prepared pan and bake for 45-50 minutes or until a toothpick inserted into the middle comes out clean.
