I received this wonderful spice from Jiva Organic called Organic Kalonji Seeds. When I looked up recipes to use the spice in, I discovered that it is wonderful in Naan, which is an Indian oven bread. I had already used the Kalonji in focaccia and love how it tasted. Organic Kalonji Seeds is a spice that has a peppery nut like taste. This spice is a small black seed that is used in Indian cooking like curry. You can view that recipe and my review of Organic Kalonji Seeds here:
So I just had to make the Naan with my Organic Kalonji Seeds. This recipe was easy to make and my family loved it. My husband told me I need to make it again and my 14 year old son also enjoyed the Naan. This bread is wonderful just as it is or served with a meal like curry or soup. I can also see this bread being awesome for sandwiches too.
Naan: Indian Oven Bread
1 Teaspoon yeast
2 Teaspoon sugar
3/4 cup warm water(100 degrees)
2 cups flour
1 Teaspoon salt
3 Tablespoons plain yogurt
2 Tablespoons olive oil
2 Teaspoons Organic Kalonji Seeds
2 Tablespoons melted butter for slathering on the Nann
coarse salt for sprinkling
Directions
In a small bowl, dissolve the yeast and 1 Teaspoon sugar in the warm water. Let it stand for ten minutes or until it is frothy.
Meanwhile combine the flour, salt, and sugar in a large bowl.
Once the yeast is frothy, add the yogurt and the olive oil to it in the small bowl and stir to combine. Then pour the yogurt mixture into the dry ingredients and add the Organic Kalonji Seeds. Mix the ingredients together, adding more flour if needed to make the dough not sticky. Use your hands to knead the dough together until the dough comes together. Cover the dough with a damp towel and let it sit for an hour in a warm place. I like to turn on my oven for a minute and then turn it off to make a nice warming place for the dough.
After the dough doubles in size, place the dough on a floured surface and divided into six pieces. Lightly roll each piece into a ball. Using a floured rolling pin, roll each piece into a 8-9 inch circle.
Warm a large skillet over medium high heat. Have the melted butter along with a brush and the coarse salt nearby to put on the cooked bread. Place a dough circle on the pan and cook for about two minutes on each side, or until dark spots appear.
Remove the Naan from the skillet and brush with the melted butter and sprinkle with a little bit of salt. Place on a plate. Repeat with the remaining dough.
