Chile-Cheddar Casserole Bread




 Fall is here and that means cooler temperatures. When it gets cooler outside, I just want to bake bread as I love the way it makes the house smell so good. I discovered a new way to make bread, you make it in a casserole dish. This bread, being that it has yeast in it, still rises and has a great soft, moist, and chewy texture like bread. All you have to do is mix the dough and rise it in the same dish that you will be baking it in.

   My bread recipe has a kick of flavor and heat in it from green chile and chili powder. When you live in New Mexico you add green chile to everything as green chile is grown here. We also use chili powder in our cooking too as it adds great flavor to New Mexican cooking. 


Chile-Cheddar Casserole Bread

1/2 cup warm tomato juice (105 F to 115 F)
1 package active dried yeast (1 1/2 teaspoons)
1 cup sour cream
2 eggs
2 tablespoon sugar
1 teaspoon salt
1/2 teaspoon Jiva Organics Chili Powder 
2 1/2 cups all-purpose flour
1 1/2 cups shredded cheddar cheese
1/2 cup diced green chiles
sliced green onions to sprinkle on the top of baked bread
 additional Jiva Organics Chili Powder for sprinkling on baked bread

1. In a large mixing bowl combine tomato juice and yeast: let stand until foamy( about 5 minutes). Add the sour cream, eggs, sugar, salt, 1/2 teaspoon chili powder, and 1 cup flour. Stir until well combined. Stir in the remaining flour, 1 cup of cheese, and the green chilies until soft sticky dough forms.
2. Transfer the dough to a greased 2-quart oval or rectangle baking dish. Cover loosely with plastic wrap and let rise in a warm place until double in size (1 to 1 1/2 hours).
3. Preheat oven to 350 F. Bake for 40 minutes. Remove from the oven and sprinkle with remaining cheese. Return to oven and bake for 5 more minutes. Cool for 20 minutes and if desired sprinkle with sliced green onions and additional chili powder for more flavor and heat.

I cut and served the bread in the baking dish but you can remove it from the dish also.
