I love making egg muffins for breakfast. I remember the first time I made them and the mess they made. I used a regular muffin tin and greased it very well. The egg muffins got stuck in the muffin tin and it took forever to get the tin cleaned. I soak my muffin tin all day but I still had a hard time getting it clean.
I found a better way to make my egg muffins! I now use Globally Good Silicone Baking Cups when I make my egg muffins. The muffins slide right out after baking and clean up is a breeze. These silicone cups are amazing! These colorful cups save you money as they reusable, unlike muffin papers. You just place them in your muffin tins or on a cookie sheet. There is no need for greasy, sticky sprays, just fill and bake. The stickiest of recipes will pop right out.
These silicone cups are FDA approved, BPA free, and stain resistant. They are safe to use in the oven, microwave, freezer, and dishwasher. They have many uses beyond muffins too. You can use them for cupcakes, kids snacks, making chocolates, mini cheesecakes, candles, ice cream treats, and more. I just love the way my treats look in these silicone cups! I now make my egg muffins more often as no more mess involved with these cups.
Broccoli and Cheese Egg Muffins
1 cup cooked broccoli, chopped into small pieces
6 eggs, beaten
3/4 cup shredded cheddar cheese
1/2 teaspoon salt
1/2 teaspoon black pepper
Makes 6-8 muffins
Place the silicone cups on a cookie sheet or in a muffin tin. Preheat the oven to 350 degrees.
Combine all ingredients in a bowl and mix well. Dived the egg mixture evenly between the silicone cups. Bake for 25 minutes or until eggs are set.
