Safe Caesar Salad Dressing
Servings: 4 / Active time: 15 mins / Total time: 15 mins
Ingredients
1 Safest Choice™ pasteurized egg
1 to 2 tsp finely chopped garlic (1 to 2 medium cloves)
1 anchovy fillet, mashed (or 2 inches of anchovy paste)
Pinch coarse salt
2 tbsp freshly squeezed lemon juice (juice of ½ lemon)
3 drops Worcestershire sauce
6 tbsp extra-virgin olive oil
Preparation
1. In a blender or food processor, combine all ingredients except olive oil until blended.
2. With the motor running, slowly drizzle in the olive oil until dressing is well combined and creamy.
3. Toss dressing with freshly grated Parmesan cheese, romaine lettuce, croutons, and coarsely ground black pepper and serve immediately.

I would love to try the Sriracha Shrimp Salad! I am on a Sriracha kick right now. I also worry a lot about Salmonella. I'd love to be able to eat cookie dough without having to worry about it.
