Easy Oven Roasted Rainbow Peppers With A Caribbean Flair

                               I just love all the colors of peppers

  Spring is here and the selection of produce in the stores is like a rainbow. Lately, my store has had these pretty bell peppers in so many different colors. I just can't resistant buying one in each color. Peppers can be enjoyed in so many ways. I like eating them raw with hummus and roasted as a topping for pizza or in fajitas. You can even stuff these peppers. I think my favorite way to enjoy peppers is roasting them in the oven. The roasting gives the peppers an incredibly sweet taste. I also like adding some type of seasoning to the peppers before I roast them to give them even more taste. I just think spices give food so much flavor. One of my favorite spices right now is a Caribbean Spice Blend. This spicy and sweet spice blend is perfect for roasted veggies, beans, rice, Jerk chicken, and other slow-cooked meats. It is the perfect summer barbecue spice!

                 Peppers are loaded with vitamin C!

 These roasted peppers are perfect on top of pizza or in a salad. My family also likes to use them for tacos. They are so tasty, I eat them right out of the oven. The rainbow selection of peppers is so inviting that it encourages my kids to eat their veggies.

Easy Oven Roasted Rainbow Peppers With A Caribbean Flair

4-5 bell peppers in assorted colors, sliced into strips or circles
1 tablespoon POD & BEAN™ CARIBBEAN SEASONING BLEND
2 tablespoons olive oil
Salt and pepper, to taste

In a large bowl, add peppers, olive oil, Pod & Bean™ Caribbean Seasoning Blend, salt, and pepper and toss well.
Place in 350° F oven and roast for 30-40 minutes and or until vegetables are tender and cooked through.

Microwave Chocolate Strawberry Lemonade Mug Cake

   My family likes cake but making a cake can be time-consuming, even if you use a cake mix. There is the mixing of all the ingredients, the long baking time and then the waiting for the cake to cool down.My biggest complaint is the waste that comes from using a boxed cake mix. My family never eats all the cake and I end up tossing most of it. I wish cake mixes made only one cake instead of two. Maybe my family never finishes the cake as those boxed cake mixes are so bland. Homemade cake tastes so much better but takes even more time to make. So when I discovered that I could make a cake in a mug in the microwave, I was overjoyed! Now my family can have cake. I know making a cake in a mug has been around for quite some time and my teen has made them. I just wanted to share with you this delicious cake mix that I discovered that makes it so much easier. I also have a recipe that uses applesauce so the cake is a bit healthier for you.

  My Chocolate Strawberry Lemonade Mug Cake is perfect for spring. It is a light white chocolate cake that has bits of strawberry lemonade chocolate bits in it. So you get a delicious cake with a unique flavor. This cake is so moist that it needs no frosting but some whip cream and fresh strawberries would give it a perfect touch. The best part is that is that it has only five ingredients and needs only 1-2 minutes to cook. My recipe makes two large servings and can easily be doubled. So no wasted cake!

  This delicious White Chocolate Cake mix that I use has Dove white chocolate in it and it is a baking mix that you can make many things with like White Chocolate Pancakes and cupcakes. I like that I can measure out what I need for a recipe. My cake gets its unique flavor from these yummy Strawberry Lemonade rich 64% cacao dark chocolate rounds that are slightly sweet, slightly tart and have an all-natural strawberry and lemon sugar flavor. These chocolate rounds are perfect for baking.

Chocolate Strawberry Lemonade Mug Cake

Ingredients
1 egg
1/4 cup milk
1/2 cup applesauce
1 tsp vanilla
1 cup DOVE® SIGNATURE White Chocolate Baking Mix
1/2 cup Strawberry Lemonade Rounds, broken into pieces


Directions
1. In a mixing bowl, whisk egg, milk, applesauce, and vanilla until well incorporated.

2. Add DOVE® SIGNATURE White Chocolate Baking Mix and Strawberry Lemonade Rounds, combine until smooth.

3. In 2 large mugs, fill ½ full of batter.

4. Microwave for 45 seconds. The cake will begin to rise above the rim of mug. Allow contents to settle and microwave for an additional 30-45 seconds. Contents should be slightly moist but not runny.

5. Allow the cake to cool for 1-2 minutes before consuming. For additional flavor place a Strawberry Lemonade Round on top the cake while it is still warm so it will melt.

My Love Of Coffee With Community Coffee

My day is not complete without coffee!

       I admit I have a thing for coffee, maybe even an obsession. So when my city had a Chocolate and Coffee Fest, I was excited to go to it. Who wouldn't want to attend an event that had samples of coffee and chocolate? The two younger boys were excited to go sample all kinds of chocolate treats and I was excited to drink coffee all day. This wonderful event had many vendors giving out samples of coffee, chocolate, and other delicious treats. I enjoyed so many cups of coffee that I lost count. My youngest son enjoyed sampling flavored salts and both boys enjoyed all the fudge samples. We even played a game and tried to win a bag of whole bean coffee. My youngest did a great job and won me a bag of coffee. When we decided that we had our fill of coffee and chocolate samples, we decided to purchase a huge pretzel to take home. I knew that this pretzel would be great with a cup of coffee the next day.

 Coffee and pastry go great together. My favorite treat that I enjoy with a cup coffee is a cookie. My husband, on the other hand, likes pastries with his coffee. A warm sweet treat is the way he enjoys his coffee. His favorite treat is the Beignet. When he went to New Orleans a couple of months ago, he was disappointed when his trip was cut short because of a broken water pipe. He had plans of coffee and Beignets for his daily treat. He was only able to enjoy one Beignet while he was in New Orleans as his conference was canceled due to the broken water pipe.    I love that the weather is warmer as that means I can get outside more for exercise and ditch the gym.
