Easy Oven Roasted Rainbow Peppers With A Caribbean Flair

                               I just love all the colors of peppers



  Spring is here and the selection of produce in the stores is like a rainbow. Lately, my store has had these pretty bell peppers in so many different colors. I just can't resistant buying one in each color. Peppers can be enjoyed in so many ways. I like eating them raw with hummus and roasted as a topping for pizza or in fajitas. You can even stuff these peppers. I think my favorite way to enjoy peppers is roasting them in the oven. The roasting gives the peppers an incredibly sweet taste. I also like adding some type of seasoning to the peppers before I roast them to give them even more taste. I just think spices give food so much flavor. One of my favorite spices right now is a Caribbean Spice Blend. This spicy and sweet spice blend is perfect for roasted veggies, beans, rice, Jerk chicken, and other slow-cooked meats. It is the perfect summer barbecue spice!



                 Peppers are loaded with vitamin C!



 These roasted peppers are perfect on top of pizza or in a salad. My family also likes to use them for tacos. They are so tasty they I eat them right out of the oven. The rainbow selection of peppers is so inviting that it encourages my kids to eat their veggies.


Easy Oven Roasted Rainbow Peppers With A Caribbean Flair

4-5 bell peppers in assorted colors, sliced into strips or circles
1 tablespoon POD & BEAN™ CARIBBEAN SEASONING BLEND
2 tablespoons olive oil
Salt and pepper, to taste

In a large bowl, add peppers, olive oil, Pod & Bean™ Caribbean Seasoning Blend, salt, and pepper and toss well.
Place in 350° F oven and roast for 30-40 minutes and or until vegetables are tender and cooked through.

  5. As someone who has caribbean roots there is nothing likes some good caribbean food. These spices and sauces do seem like it can take your meal up a notch and give you a little island flavor (pun intended).

  10. We love roasted peppers too! We soak the whole pepper in boiling water for a few minutes, let it cool down,then roast it, and only in then cut it into slices. My favorite topping is: EVO oil, garlic, and fresh basil leaves. Do you know the ingredients of the spice blend you're using?

  17. pepper roasted works weel with a chicken. Or ask for less gravy on your chicken, when eating the pepper roasted fill your fork with more rice than chicken. For more details about caribean Sxm St-Martin
