Vegetarian Chocolate Protein Pancakes

A great delicious healthy alternative to traditional pancakes.


   Pancakes are a special treat in our house. I don't make them often as they are not a healthy breakfast option. To me, they are more a dessert, especially when served with syrup.  I like my boys to eat healthy items like oatmeal for breakfast with fruit instead of pancakes with sugary syrup and fattening butter. My teen will once in a while make some pancakes for breakfast or they will enjoy them while camping. I have discovered a way to make pancakes that healthy and delicious. My chocolate protein pancakes are so delicious and are loaded with protein, fiber, and 21 vitamins and minerals. My boys love that pancakes are no longer for special occasions, in fact, they love these chocolate protein pancakes more than regular ones. The leftover pancakes are great for peanut butter sandwiches.



  So how can you make healthy and delicious pancakes? You add a delicious healthy chocolate protein powder to your pancake mix. My favorite chocolate protein powder is Chocolate Cacao Garden of Life Raw Organic Meal.  I always have a container in my pantry as I also use this incredibly healthy protein powder for my morning smoothies. The delicious chocolate flavor comes from Raw Cacao and organic stevia. What I really like about Raw Organic Meal is how they use organic raw plants for the  20 grams per serving of Organic Raw Sprouted Protein Blend. Then Garden of Life adds super healthy ingredients like Organic Raw fruits and veggies. They also add an Organic Raw fiber Blend from chia seed and flax meal.              Vegetarian Chocolate Protein Pancakes
Serves 2-4
Ingredients:

1 cup whole wheat flour
1 scoop Chocolate Cacao Garden of Life Raw Organic Meal
1/4 cup cocoa powder
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 1/2 cups cashew or almond milk
2 tbs agave syrup or honey
1 egg
Coconut oil for the skillet

Directions:

1. Mix together the first five dry ingredients.
2. Add the remaining three wet ingredients and stir together until combined .
3. Place ½ Tablespoon of coconut oil into skillet and pour about ¼ cup of batter for each pancake.
4. Cook each pancake about 2-3 minutes on each side. Serve with fresh fruits like bananas or strawberries.

I love pancakes! This is a great way to make pancakes especially for anyone who cannot eat the traditional ones. Although it probably would have never enter my mind to do so.
