I rarely eat meat and if I do it is fish. I might eat poultry a couple times a year. My friends ask me what do I eat as they think meatless dinners are boring. I think different, as I always eat exciting dishes. Here is a dish that I found in a magazine as a side dish but I added white beans and made it a complete dinner. This dish is a wonderful fall dish with butternut squash in it. I used frozen butternut squash and frozen spinach but you can use fresh. This dish is full of protein and vitamin C and vitamin A.
Barley, Butternut Squash, and Spinach Casserole
3 cups cooked barley,prepared according to package (cook in chicken broth)
one 12 ounce pack frozen spinach,cooked and drained
one 16 ounce pack frozen butternut squash cubes
2 cups white beans(can or cooked from scratch)
1 cup shredded mozzarella cheese
1/4 cup parmesan cheese
2 teaspoons black pepper
Combine all ingredients in a bowl. Then put mixture into a 9X13 baking dish and bake at 350 degrees for 40 minutes.

This sounds like a hearty meal, which would be perfect for the cold weather we are having now. Squash = yum.
