Sweet Potato And Corn Pizza



I discovered a great new tasting pizza made with sweet potatoes, corn, and rosemary. Buca De Beppo makes a pizza with potatoes, corn, and rosemary which I love so I decided to try making it with sweet potatoes. The flavor of the sweet potatoes made this pizza wonderful. Rosemary and salt give the pizza a wonderful taste too. 
I make homemade pizza at least a week as it is so easy to make the dough in my bread machine. You can use store-bought dough if you want.

Sweet Potato and Corn Pizza
one batch pizza dough( recipe at end of page)
one large sweet potato cooked and cut into pieces( I microwaved mine)
1 cup corn
1 tablespoon fresh or dried rosemary, cut in small pieces
1 teaspoon garlic
salt and pepper
2 cups shredded mozzarella cheese

Place your dough on an oiled stone on a pizza pan and form it with your hands into a circle. Then poke the dough with a fork all over the dough. This is so your dough will not be puffy when it bakes.




Then place sweet potato pieces and corn all over the dough. Sprinkle the rosemary and garlic over potatoes and corn. Then sprinkle with salt and pepper to taste. The salt will bring out the potato and rosemary flavors. Spread cheese over the toppings. Bake at 400 degrees for about 20 minutes or until crust is lightly brown.



           Pizza dough recipe
        2 cups flour    3/4 cup warm water
         1 teaspoon salt    1 tablespoon oil
         1 tablespoon sugar   1 1/2  teaspoons yeast or one yeast package
combine all ingredients in bread machine and set on dough setting. If making by hand combine all ingredients in a bowl and stir until dough forms a ball. Knead on a floured surface into a ball. Let dough rise in a warm place for an hour.

I like to use can biscuits as my dough it's fast an easy. This looks delicious.
