I made a delicious apple pie for Thanksgiving. While I made many other pies, this was my first pie with a top crust.
My husband has been asking me for a while to make him an apple pie. It is apple season and I do have a new apple slicer to try out, so how could I say no to the man I love. While I have made all kinds of pies before, I have never made an apple pie before. I think the reason I have never made an apple pie before is I have been intimidated by all the work in cutting all the apples that are needed for the pie. My new apple slicer, with the comfortable handles, will now help me core and slice all the apples that I need for my pie. I love that my new apple slicer makes perfect apple slices so my pie will look perfect for my husband. Once I finish making my apple pie, I can place my apple slicer in the dishwasher to be clean.
When I make any kind of pie, I like to make a homemade crust as it tastes so much better than store bought. A homemade crust does require more work as you have to mix the dough and roll it out. I just use my food processor to mix up the dough. My silicone rolling pin makes rolling out the dough a breeze as it has a non-stick surface and nothing sticks to it. It may be small, but that makes it easy to store. I also love using my rolling pin when I make pizza and tortillas. I usually just rinse my rolling pin after use, but this one can go in the dishwasher if needed.
Brown Sugar Apple Pie
Ingredients
3/4 cup light brown sugar
1/4 cup all-purpose flour
3/4 teaspoon ground cinnamon
7 medium apples, peeled, cored and sliced
3 tablespoons lemon juice
3 tablespoons butter, diced
1 egg, beaten, for brushing
Sugar, for sprinkling
chilled pie crust dough for top and bottom of pie (recipe below)
Preheat oven to 450 degrees F
Mix together the brown sugar, flour, and cinnamon in a small bowl. In another bowl, sprinkle apples with the lemon juice and toss. Stir in the sugar mixture to evenly coat the apples. Set aside.
Divide out chilled dough into 2 pieces and use 1 to roll out to line a 9-inch pie pan. Chill the other piece until needed for the top of pie.
Mound the apple and sugar mixture into the pie pan lined with dough. Dot with the diced butter.
Then roll out the remaining dough into a 9-inch circle and place on top of the apples. Using a fork, seal the crust along the edges of the pie and trim any excess dough. Brush the top of the pie with the beaten egg and sprinkle with sugar. Then slice a small in the middle of the pie. Bake for 30- 40 minutes or until golden brown. Cool for 20 minutes before slicing.
Pie Crust
2 1/2 cups all-purpose flour
1/4 teaspoon salt
3 tablespoons sugar
16 tablespoons butter, cold and cubed
1/4 cup to 1/2 cup ice water
In a large mixing bowl, mix together the flour, salt and sugar. Add the cold butter cubes and work it into the flour with your hands or a pastry cutter. Work it quickly, so the butter doesn't get too soft, until the mixture is crumbly, like very coarse cornmeal. Add the ice water, a little at a time, until the mixture comes together forming a dough. Bring the dough together into a ball.
When it comes together stop working it otherwise the dough will get over-worked and tough. Divide the dough in half and flatten it slightly to form a disk shape. Wrap each disk in plastic and chill in the refrigerator for about 30 minutes. On a floured surface roll each disk out into a 10 to 11-inch circle to make a 9-inch pie.
Yield: 2 (9-inch) pie crusts

That apple pie looks delicious and reminds me that my son has been asking for apple pie for awhile now. I love that slicer, I have a similar one and love using it. If I had that rolling pin, I'd bake an apple pie, too! Either that or a pumpkin pie.

Hmm, I may have to put a silicone rolling pin on my wish list. It gets pretty irritating have cookie dough constantly stick to your roller. The pie looks delicious!
