Payton's Sweetness On A Ritz - Chocolate Covered Peanut Butter Sandwiches


Football season is here and I have a delicious dessert that is perfect for a party. I made these chocolate delights after my family's favorite football player- Walter Payton. Although Payton is playing football in heaven, our family still thinks about him when we watch the Bears play. These scrumptious chocolate covered peanut butter sandwiches are so easy to make and the gang will love them. The salt of the crackers combine so well with the chocolate for a wonderful taste. If you love peanut butter cups then you have to try this. I made a batch for my family the other day and they were gone by the next day. My husband said I need to make them for our next football party.

All you need for these delicious chocolate covered crackers is a box of Ritz crackers, peanut butter, and milk chocolate chips.



 Payton's Sweetness On A Ritz
Chocolate Covered Peanut Butter Sandwiches

Makes 16
Ingredients:
2 cups milk chocolate chips
1 jar creamy peanut butter
32 Ritz crackers
Directions:
1.  Spread some peanut butter onto a cracker and sandwich together with another cracker.
2. Repeat until all the crackers are made into sandwiches with the peanut butter. You will not use all the peanut butter so save the rest for sandwiches or another recipe.                                                        
3. Place chocolate chips over a double boiler and melt. You can also melt the chocolate in the microwave.                                                                                                                                                 4. Once the chocolate has melted, using a small pair of tongs, or tweezers, dip the  peanut butter sandwiches into the chocolate until completely covered.                                                                       5. Shake off any excess chocolate and place onto a parchment lined baking sheet.                                 6. Repeat with the remaining sandwiches and set aside to dry, about an hour. You can also place the tray into the fridge to set faster.
