Peppermint Truffle Cookies With McCormick Holiday Baking




I was chosen to be a part of the McCormick Blogger Program and was compensated to write this review of a selected McCormick holiday recipe. All opinions are my own.


I love this time of year and my favorite part is all the baking I get to do. I love baking for Christmas parties and cookie exchanges. My family also enjoys all the goodies I make. I am always searching for new recipes to try and  I found this wonderful recipe on http://www.mccormick.com/ for Peppermint Truffle Cookies that uses McCormick Pure Peppermint Extract. I love using pure peppermint extract in my baking as it brings out a wonderful peppermint flavor. My son also commented to me while I was cooking that the extract smells wonderful.


The recipe calls for ingredients that you may already have at home and it is simple to make. This recipe makes rich truffle cookies with a chocolate surprise inside. They were so much fun to make and is a great recipe to make with the kids. They will enjoy rolling the cookies in the sugar. The recipe calls for regular sugar to roll the cookies in but I also used some green and red sugar that I had on hand to give the cookies a festive look.


                                      Peppermint Truffle Cookies

Ingredients

8 ounces bittersweet baking chocolate
1/2 cup (1 stick) butter
1 cup sugar, divided
1 egg
1/2 teaspoon McCormick® Pure Peppermint Extract
2 cups flour
36 milk chocolate kiss-shaped candies, unwrapped


 Directions
1 Preheat oven to 350°F. Microwave chocolate and butter in large microwavable bowl on HIGH 1 to 2 minutes or until
butter is melted. Let stand 10 minutes to cool slightly. Add 1/2 cup of the sugar, egg and peppermint extract. Beat
with electric mixer on medium speed until well blended. Gradually beat in flour on low speed until well mixed.
2 Shape dough into 1-inch balls. Press a chocolate candy into the center of each ball, forming dough around the
candy to completely enclose it. Roll in remaining 1/2 cup sugar to coat. Place 1 inch apart on greased baking
sheets.
3 Bake 9 to 11 minutes or until cookies are set. Cool on baking sheets 5 minutes. Remove to wire racks; cool completely.



 These cookies taste wonderful with a nice peppermint flavor that McCormick Pure Peppermint Extract gives these cookies. I love the chocolate melt in your mouth chocolate center. I know what I am bringing to my next cookie exchange. These will also be great for the church play that I need to bring cookies to. Peppermint is my favorite holiday flavor. I look forward to chocolate/peppermint treats while the pumpkin craze is still going on!
