 I love having a Pure Flix subscription as that means I can watch the best holiday movies. I recently had an opportunity to watch We Three Kings. This Christmas movie is based in the 1800s and tells the story of how this popular Christmas carol was written. It is a beautiful movie about how the hymn We Three Kings was introduced in a Christmas pageant with the help of an uncle and his nieces and nephew. 

We Three Kings synopsis: The Fay children can't wait for their Uncle Henry to arrive for Christmas. With the help of Uncle Henry's new song, "We Three Kings", the children learn truths about Jesus and the gifts that were given to Him.

  I remember singing the song We Three Kings, long ago, in school performances. Back then, not being a Christain, I really did not know much about the song other than the words. Since I did not attend church as a child, I certainly did not know who the three kings were or the meanings of the gifts that they brought to baby Jesus. The gifts that the three kings brought, gold, frankincense, and myrrh had little meaning to me as a young child. 

 Watching the movie We Three Kings with the family would help children understand more about the 3 gifts and why the kings gave them to baby Jesus. Even I learned more about each gift. I knew that frankincense and myrrh were perfumes but I learn that these fragrant perfumes were produced from the sap of trees.

Quick & Easy Peppermint Bark~ Dairy Free Version

This peppermint bark is so easy to make and only uses 2 ingredients!

  My son needed a holiday treat for his school party and I was short on time. So I made peppermint bark. His whole class loved the candy and everyone requested the recipe. They were shocked at how easy it was to make. This delicious peppermint candy only needs white chocolate chips and candy canes. It can be made in less than 30 minutes. You will never buy storebought peppermint bark again. You can also make this recipe with milk chocolate chips for a chocolate peppermint bark or if you have a dairy allergy then you can use dairy-free chocolate chips. I wish that I could find dairy-free white chocolate chips but no luck yet.

Quick & Easy Peppermint Bark
   1 bag white or milk chocolate chips (for a dairy-free version use dairy-free chocolate chips)
     1 box 12 count candy canes

Unwrap the candy canes and crush into small pieces. I crushed my candy canes in my blender on chop for a couple of seconds. If you don't have a blender or food processor, you can crush them in a bowl with a potato masher or in a ziplock bag. Set the candy aside and line a baking sheet with a silicone sheet, wax paper, or parchment paper. Place the white chocolate chips in microwave safe bowl and cook on high for 1 and a half minutes. Stir and cook in 30-second increments until melted. Make sure to stir after each 30-second cookings. Do not lick the spoon as doing so will get moisture on the chocolate and cause it to crumbled and not melt. Once the chocolate is melted, stir in the crushed candy canes. Then spread the mixture on the lined baking sheet and smooth it out to cover the entire pan. Let cool for an hour or until hard. Then break the candy into pieces.

Makes a great gift!

  My church was collecting desserts for a school holiday food drive and I decided to place the candy canes and the white chocolate chips into a mason jar so that the family could make the bark. I know that I love cooking with my kids so I want others to have that same joy. I printed the recipe on a photo card and then tied it to the jar. I also added a cute label that I found online. It was such a festive looking gift.

A delicious treat 

  My family loves peppermint bark and always request for me to make it around the holidays. It is such an easy Christmas treat to make and it is also so easy to make for holiday potlucks and Christmas parties. I think this will be the treat this year that I make for the neighbors on Christmas Eve. After Christmas when the candy canes go on sale, I always buy plenty of boxes as they keep until the next Christmas. So if you need a delicious treat for a party or a hostess gift, you need to make this.

 Pumpkin pie spice is such a flavorful spice that can be used for many recipes beyond pumpkin pie. It can be used like cinnamon in so many recipes. Think of pumpkin pie spice as a gourmet cinnamon spice. Pumpkin pie spice will give so many recipes a wonderful taste. The best way, of course, is to use it in a cup of coffee. So you can have pumpkin spice coffee year-round instead of just in the fall. 

Who says that pumpkin spice coffee can only be consumed in the fall?   My favorite way to use pumpkin pie spice is in cookies. This spice adds a gourmet taste to sugar cookies. I love adding pumpkin pie spice to my sugar cookie cut-outs. The pumpkin pie spice makes my holiday cookie-cutter cookies taste so good. These are the cookies that I bring to all my Christmas cookie exchanges.   I have a wonderful holiday sugar cookie recipe that uses pumpkin pie spice. This cookie has a wonderful taste of cinnamon and other spices that most associate with pumpkin but has no pumpkin taste in it. The cookie has hints of ginger, cloves, and nutmeg in the cookie batter. To me, the cookies taste like a light gingerbread cookie. So if you are a fan of gingerbread cookies, you are going to love these cookies. If gingerbread cookies are not your thing, you have to try these cookies as they are a less spicey version of those holiday cookies. 

 You just have to make them in order to understand the delicious spice combination taste. These delicious buttery cookies can be enjoyed year-round. I told my husband that I would be making these cookies, instead of my regular sugar cookies, next Christmas.

Ideas for using pumpkin pie spice
                                       
+ Coat chunks of sweet potato or butternut squash before roasting
+  Mix it into pancake or waffle batter
+ Brew a good dash of it with your coffee
+ Add to oatmeal with some maple syrup
+ Sprinkle over yogurt
+ Sprinkle into warm tea
+ Stir into French toast batter
+ Stir into eggnog
+ Sprinkle into a latte
+ Add it to frosting
+ Add a teaspoon to coffee grounds before brewing

Holiday Cinnamon Spiced Sugar Cookies
Makes about 4 dozen cookies

Ingredients
3 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons pumpkin pie spice
1 cup unsalted butter, at room temperature, make it vegan or dairy-free with vegan butter
1 cup of sugar
2 large eggs or 2 egg substitutes
2 teaspoons Pure vanilla extract

1. In a medium bowl, whisk together the flour, baking soda, salt, and pumpkin pie spice.
2. In a large bowl, beat the butter and sugar until light and fluffy. Beat in the eggs and vanilla. Then gradually beat in the flour mixture.
3. Divided the dough into thirds and wrap each piece in plastic wrap. Refrigerate for a least 2 hours.
4. Preheat oven to 350F
5. On a lightly floured surface, roll out one piece of dough to 1/8 inch thick. Cut out the cookies with cookie cutters and place them on ungreased cookie sheets, 2 inches apart.
6. Bake for ten minutes or until edges are lightly brown. Cool the cookies on the sheets for 2 minutes, then transfer to wire racks to cool completely. Repeat with remaining dough.

Tip: These cookies can be frosted. I added a teaspoon of the pumpkin pie spice to a container of cream cheese frosting and the taste was so delicious.

Cheese Wrapped Asparagus Bundles

A delicious way to serve asparagus!

  I just love asparagus and I discovered a new fancy way to serve it. I will be including this new asparagus recipe on my Christmas dinner menu. These delicious cheese/asparagus bundles are a fancy way to serve a vegetable that your guests will love. The bundles will be the center of attention on the holiday dinner plates. These cheesy bundles are so easy to make and are low in carbs.

 The secret ingredient in my Cheese Wrapped Asparagus Bundles is a wonderful flavorful cheese wrap that is so unique and can be used for many "wow" food presentations. These Folio Cheese Wraps come in three delicious flavors and I love that they are lactose-free. I received all three flavors of the natural cheese wraps and they brought back memories of when I had cheese parmesan crisps at a fancy restaurant, many years ago. These cheese sheets can make those parmesan crisps and so much more.   To make these wonderful tasting Cheese Wrapped Asparagus Bundles is so simple. You just need some cooked asparagus, I like to saute mine but you can grill or steam the asparagus too. Then you take 6-8 stalks of the cooked asparagus, making sure it is still warm, and wrap a full Folios Parmesan Cheese Wrap around the asparagus. For a pretty look, add some fresh herbs, I used rosemary, and tie up the bundle with some twine or a lemon peel strip. The warm asparagus melts the cheese wrap and the taste is so delectable.
