All this food and overeating can result in unwanted weight gain and New Year's resolutions of crazy diets. That is if you allow the temptation of food to become the enemy.

Food is not the enemy

The best way to avoid the temptation of overeating all that delicious holiday food and delicious sweets is to have a severe food allergy that makes it impossible to enjoy the food served at the holiday parties. That is my life, having a life-threatening dairy allergy so that makes it hard for me to overindulge at parties.   The guidelines for a full reset day are simple: enjoy a soup every 2-3 hours, drink lots of water, and love your body. This is not a starvation fasting diet. If you are still hungry, enjoy a snack of raw fruit or veggies. You can even grab a handful of nuts or seeds.

My Reset Day with Splendid Spoon

When I opened my box of Splendid Spoon soup, I was excited that all the plant-based soups were allergy-friendly and contained no ingredients that I was allergic to. The containers of the Reset soups had all the ingredients in bold letters so I could see that there was no dairy, soy protein, or mushrooms in the soup.

I decided to do almost a full day of Reset after a day that I did lots of holiday baking. I may not over-indulge when outside the home but give me a batch of dairy-free chocolate chip cookies and I may eat too many cookies. The day before I had baked the best holiday sugar cookie, using vegan butter and I ate one too many Christmas cookies.

I like to start my day with intense exercise, as it helps me manage my asthma naturally. So I need the nutrition and protein that I get from my morning plant-based smoothie. I had my first bowl of soup around 11 AM and enjoyed the butternut turmeric. This soup was delicious and I enjoyed every bite. I loved that the soup had pieces of vegetables in it. This was a thick soup with plenty of flavor.

The Reset program is made up of 5 delicious light soups: Butternut Turmeric, Cauliflower Potato Chowder, Fennel Consommé, Garden Minestrone & Lentil & Kale.

Then around 1 PM, I had another bowl of soup. I choose to eat all my soups heated up. There is something about a warm bowl of soup that just makes you slow down. I also ate plenty of raw veggies throughout the day. I am not one who likes to diet as I don't like the feeling of hunger. Being hungry leaves my mind tired and unable to think. These soups along with veggies kept me plenty full.

The soups were full of flavor and hearty. I could see myself enjoying these soups even when I did not need to reset my body. The soups would be great for a light meal or I could enjoy them with some fresh homemade whole wheat bread.

Splendid Spoon is more than just delicious light plant-based soups but I also enjoy their 100% plant-based smoothies, soups, grain bowls, and noodle bowls. Tips on Cooking With Meal Kits and Wine

Home meal kits are a hot trend in the food world, as they make it very easy to provide easy dinners any day of the week. The meals are easy to make for people that enjoy light cooking, and the kits come with everything you need for a tasty dish that you often wouldn’t select on your own from the grocery store. Since the pandemic began, meal kits from companies such as Sunbasket meal delivery have seen historical revenue and volume and a rise in popularity when people began shopping out of the homeless. Some providers have seen a 24 percent increase in sales in the last several months.

They are a fun way When you are cooking with meal kits, you may have wine included as an ingredient. It can be a confusing ingredient, but when used well, the outcome is stunning. Learn some tips about cooking with wine here.

Cooking Wine, Drinking Wine

If you are ordering meal kits such as Sunbasket meal delivery or other brands, you may find wine included with the odd recipe or two. Many cooks like to have a sip while they are cooking with wine. You can usually buy cooking wine at the grocery store, or a wine shop. At the grocery or convenience store, it will be near the vinegar and oils.

Cooking wine and traditional drinking wine are very similar, but cooking wine focuses less on full-bodied tones and flavors. Wine is good in cooking because the alcohol content tenderizes meats, and the flavors of the wine blend well with sauces and pasta. Drinking wine simply offers more depth of flavor.

Fortified wine is strong and has been aged with some exposure to oxygen. This wine gives food a nutty profile and adds depth to a wide range of foods. There are a number of cooking methods that you can use wine with.

Braising

Braising is the low and slow method of cooking where meats become something beautiful. You start by searing the meat and then covering it with a liquid sauce that contains wine, water, and meat juices. This broth will cook the meat and turn a result of a depth to your wine.

Deglaze

Deglazing is a way of stripping the pan of its grease and meat juices and using those particles to develop a cooking technique that adds tremendous flavor and punch. This technique adds a unique texture to meats after you sear the meat. Once you sear both sides of the meat, you will see caramelized meat particles called the fond in and around the pan.

Deglazing strips the pan of this crusty fond and incorporates that awesomeness into the food. Adding some wine with the fond can help to bring the flavor up a notch. When you start searing, add some butter to the pan to bring some richness and depth to the meat. Spoon this liquid over your meat as you cook it to turn it into something beautiful and brown.

Start Meal Kits Today

When you are learning exciting new things in the kitchen, wine is a great go-to to have. Meal kits like Sunbasket meal delivery will come right to your home so that you can begin braising your first dish with wine right away. Start your meal kit obsession now.

The pandemic of 2020 has brought so many new experiences into my life. Having to stay home and practicing social distancing has left me with time on my hands. Last summer, I started a garden as I worried about food supplies. I thought growing food would help me fill up my deep freezers with fresh veggies. For me, growing a garden has always been something that I wanted to do but have put off simply due to the fact that I live in a desert. So when this lung virus covid thing hit and I had time on my hands, I gave growing vegetables a try. I started a small garden with the hopes of growing tomatoes, peppers, spinach, beets, and kale.

My garden last year did not give me much, but I enjoyed the vegetables that I did grow. I was amazed that I could grow food, and that inspired me to grow a swingset garden. I had big plans and I expanded my Southwest garden the next year. I started a compost pile to enrich my soil and planted seeds to grow beets, kale, chard, and watermelon. I also bought tomato plants, pepper plants, and several herbs. I had a passion for growing food.

Beets are my favorite garden vegetable

Last year I grew beets in my garden. I was amazed that beets grow well in the desert. My beet plants gave me plenty of beet greens that were so delicious but only a couple of small beets. I think it may have been that my soil was too rocky, so the beets did not have room to grow. So this year I made a new space for my garden and bought several bags of soil. I planted two packages of beet seeds as I had big plans to grow lots of beets.

I was going to grow beets to make beet powder. I love adding beet powder to my daily protein smoothies for their pretty pink color and nutritional boost. Beets are a superfood and are loaded with so much nutrition. So beet powder is a dried version of beets and gives my smoothies some awesome nutrition. Check out the amazing benefits of beets.

I was blessed with beets

My garden gave me plenty of beet greens and only a couple of beets. I roasted beets in the pressure cooker, but did not have enough beets to make beet powder. Then God blessed me with beets in an amazing way.

My church has a monthly food pantry that my husband runs, and we received a huge pallet of fresh beets. I had never seen that many beets in my life. The beets were packaged in 25-pound bags, and we gave out plenty of beets. When the food pantry was over, we still had 15 bags of beets left for the volunteers to take home. I was able to take some of the fresh beets home. I was excited to process the beets into many different recipes, including my beet powder.

While I was dehydrating all the beets, I remember last year's huge supply of fresh carrots that I received from the food pantry and how I made delicious homemade carrot juice. So I grabbed my vegetable juicer from the pantry so I could make beet juice. I was excited to turn fresh beets into purple beet juice.

What to do with beet juice pulp

Since this was my first time juicing beets, I was amazed at how much beet pulp was left over. The beet pulp is the fiber from the beets. While the majority of nutrients are in the beet juice, the beet pulp has some nutrition and is a great source of fiber. So don't toss it! There are many uses for beet pulp. Since I had a lot of beets, I made a huge jar of beet juice and that left me a big bag of beet pulp. So I had fun creating beet pulp recipes. I also froze the beet pulp for future recipes.

Simple Beet Burgers Made With Oatmeal

Beet burgers are loaded with flavor and packed with nutrition. These hearty plant-based burgers will satisfy your veggie burger craving.

Lately, I have been creating plenty of beet recipes as I was blessed with a huge amount of fresh beets. In the past week, I have dehydrated beets, cooked beets, and roasted beets. I also juiced the beets, made beet hummus, and made beet powder. All these recipes will be at the end of this post. So my freezers are filled with roasted beets and beet pulp. I think I may have hit my limit on eating beets.

So when I picked my final crop from my swingset garden, before the cold front came, I dug up several tiny beets. The beets were about the size of a super ball or smaller. Not wanting to waste food, I cleaned the tiny beets up and cooked them in the microwave. I stuck the cooked beets in the fridge, with my other beet creations. I figured that I would eat them for lunch the next day.

Earlier that day, I went grocery shopping and was going to buy some plant-based burgers but I passed on them after I saw the price. So I decided to make some homemade veggie burgers at home. While I was gathering up the ingredients for DIY veggie burgers, I remembered the cooked beets that were in the fridge. I knew that the fresh beets would make delicious beet burgers that would be so nutritious.

The above ingredients are what I used in my burgers with beets as they give the best flavor and texture to the veggie bugers. While I have used rice in my bean burger recipe for one, I find that oatmeal keeps the vegetarian burgers from falling apart and gives a better chewy texture. I also used chopped walnuts as it has hearty flavor and that is what I had in my pantry. You could use other chopped nuts like cashews.

Beet Burger Ingredient Swaps

The other day, I made homemade beet juice from a huge bag of fresh beets. If you have ever made homemade juice, then you know about the leftover pulp. So I finished making my juice from the beets and made about 8 cups of beet juice. That left me with a lot of beet pulp. While most people would toss the vegetable juice pulp, that is a bad idea.

The pulp from making vegetable juice contains a lot of fiber and nutrients. This nutritious beet pulp can be used in so many recipes. So I froze almost all of the beet pulp and decided to use the rest to make plant-based beet burgers and beet waffles. You may have remembered last year when I received a new juicer and made homemade carrot juice. It was then that I discovered how to make carrot juice pulp waffles. So I then knew that the leftover beet pulp would make some delicious purple beet waffles.

How To Make Beet Powder From Fresh Beets

Beet powder is a superfood with super amazing benefits, but it can be pricey. Find out how to make beetroot powder from fresh beets. This beet powder can be used as a natural food coloring, in smoothies, or in recipes.

This past year, I discovered beet powder, and I love adding it to my healthy protein smoothies several times a week. I just love the amazing purple/pink color that beet powder adds to my smoothies. After the pretty color, beet powder is a superfood supplement that is full of amazing health benefits. I will talk about the health benefits of beet powder later in this article.

Since I was using beet powder on a regular basis, I decided to grow beets in my garden. I had visions of an abundance of beets from my garden that I could make into beet powder. When my beet seeds started to sprout, I was super excited. While I could not see the purple beets growing underground, I saw lots of beet leaves growing.

My garden gave me plenty of beet greens but sadly just a few small bite-sized beets. While the beet greens were super delicious, in my opinion, better than spinach or kale, I was hoping for some big beets. I think that my soil may not have been deep enough in my swingset garden.  So I made a plan for next year's garden to make my garden deeper.

A blessing of baskets of beets

Then I received a blessing of beets from God. My husband and I run our church food pantry. Last month, the Road Runner Mobile Food Pantry delivered a pallet of fresh beets. I am talking about at least 75 bags that contained 25 pounds of beets. I did not count, but it was a lot of beets.

One of the perks of working at a food pantry is taking home leftover food items that can not be used at the following food pantry event. So after we served all the people at the food pantry and I begged the volunteers to take some beets, we had way too many bags of beets left over. So, I had my sons load several bags of beets into the car. I was super excited that I could make beet powder.

Beet Powder uses

Superfood powders are amazingly versatile and can be used in all sorts of ways to boost your health and well-being. Many people find the best red superfood powder or high-quality super green powder in a variety of ways. This includes:

+ Add to smoothies

+ Use as a natural food color

+ Use in recipes for color

+ Add nutrition to recipes.

God had blessed me with beets

I hate to see food being wasted, and I knew I had to rescue these beets so they would not end up in the landfill. So I placed all the beets in my garage and thought of all the ways that I could cook beets. While I wanted to fill my freezers with plenty of roasted beets, I did not have much space in my two deep freezers. So I knew that the best use of fresh beets was dehydrating them into beetroot powder.

I had never dehydrated beets before. When I buy beets, my favorite way to cook them is in the pressure cooker. Cooking beets in the pressure cooker is so simple. So I did a search online on how to make beet powder. I discovered that the first step to making beet powder is drying the beets into beet chips.

9 Benefits of beets

+ Loaded with nutrition

+ Helps lower blood pressure

+ Can Improve Athletic Performance

+ May Help Fight Inflammation

How to dehydrate beets

Dehydrating beets is so simple. If your oven temperature can be set to 200 F, then you can dry the beets in the oven. You simply peel and slice the beets into thin slices. Then you place the beet slices on cooking sheets and place them into the oven, which is set at 200 F. The drying of the beets can take 10 or more hours. So choose a day that you will be home to dehydrate the beets.

The beet chips are done when they are brittle and can be easily be snapped into pieces. It is the crispy beet slices that you will use to make the beet powder. The best part of drying beets into beet chips is you can't over-dry them. So, if you don't mind the oven on while you are sleeping, then have the beets dehydrate overnight. I have left the house for a couple of hours while my beet slices were in the oven.

Dehydrated beets also make a tasty snack

While I was dehydrating my beet slices, I discovered that dried beet chips make a tasty snack. You can eat the dried beets just like chips. The dried beet chips have a nice sweet taste to them. My husband even enjoyed snacking on the beet chips. It was then that I decided to store the dehydrated beet chips and just make my beet powder as needed. Dehydrated beets can last for years when stored properly in airtight containers.

Steps for dehydrating beets

+ Wash and scrub the beets

+ Slice off both ends of the beet

+ Peel the beets

+ Slice the beets into thin slices

+ Place on cookie sheets in a single layer

+ Set oven to 200 F

+ Place the beets in the oven for 8 or more hours

+ Beets are dried when brittle and can be easily broken

+ Let the beet slices fully cool before storing

+ Store in containers with tight lids

Beet chips to beet powder

Once your beet slices are dried, they can be made into beet powder. I like to use a clean coffee grinder to make the beets into beet powder. So grab your coffee grinder and clean out all the coffee residue. Then place a couple of dried beet slices into the coffee grinder. If your beet slices are big, break them into pieces before you place them into the grinder. Then grind the beets, like coffee beans, until you don't hear any beet chips hitting the sides of the coffee grinder.

Slowly take off the lid to the coffee grinder as beet powder will fly into the air. The beet powder will be messy, so open the coffee grinder over a bowl. My advice is to just grind up enough beet powder to last for a month. Homemade beet powder will turn brown after a couple of months. The dried beet chips will last longer in storage.

Beets can be made in so many different ways. From cooked beets to beet juice, I have used my blessing of beets for many different beet recipes. I like to joke that I have made beets in 100 different ways but I think I have eaten beets this past week in about 10 different ways. I have made beet juice and then used the leftover beet pulp for beet pulp waffles. Make sure to check out my carrot juice pulp waffles. I also roasted the beets in the oven and boiled beets on the stove. I used the boiled beets in my beet hummus.

I also used beet juice in my daily smoothies for blueberry beet smoothies. I made beet burgers with the roasted beets with this veggie burger recipe. My friend made pickled beets. Then I froze plenty of beet juice pulp and roasted beets in my freezer. You might think that I am tired of eating beets but I love the taste of beets.
