Homemade Roasted Red Pepper Hummus


   This past week at my church we celebrated a wonderful event! The celebration was for the pastor and his family, as they have been with our church for ten years. The congregation wanted to say thank you to them with a party. We served a wonderful cake and I also made a vegetable tray with roasted red pepper hummus. I chose to make hummus as our pastor was following a plant-based diet and this was the perfect vegan snack that everyone would enjoy. So many people enjoyed the hummus and asked my husband where he had bought it. They were surprised when he told them that I had made it. I told them it was so easy to make hummus and they wanted the recipe. So I am posting my recipe for Roasted red pepper hummus. It is so simple to make and all you need is a few ingredients and a food processor. I love serving my hummus with veggies and crackers. This vegetarian recipe is one of my favorites.

So easy to make

Once you see how easy it is to make hummus, you will never buy the expensive containers of hummus at the grocery store again. All you need to make delicious hummus is a can of chickpeas, tahini, and a couple of other ingredients. So make sure that you stock your pantry with chickpeas, also known as garbanzo beans, and tahini. Tahini is a paste made from roasted sesame seeds and has a taste similar to peanut butter. It is the roasted sesame paste/tahini that gives hummus its great taste.

Hummus is healthy

I love snacking on hummus as it is a healthy snack that is high in protein and fiber. Hummus is the guilt-free snack that I love to eat with fresh vegetables and crackers. My favorite crackers are wheat crackers. Hummus is also my favorite healthy dish to bring to a party or potluck. It seems that people enjoy the taste of hummus. I don't know about you but I tend to eat more veggies when I have a bowl of hummus to dip them into.


Roasted Red Pepper Hummus

2 cups canned chickpeas, drained and rinsed
4 garlic cloves
1 1/2 teaspoons salt
1/3 cup tahini(sesame paste)
6 tablespoons lemon juice
1-2 roasted red peppers
2 tablespoons olive oil

Directions
Place all ingredients in a food processor or a high-speed mixer. Process until pureed, adding a tablespoon or more of water until it reaches the desired texture. Serve in a bowl and drizzle olive oil over it for a nice look. Serve with raw veggies and crackers.

My husband added sheep to the cake. The sheep are animal crackers that he dipped in white chocolate and used black gel for the eyes. This is one of the fresh vegetable trays that we served with the roasted red pepper hummus.

Ohh I love hummus! I actually really like a lot of the gluten-free cracker options as well, even though I myself am not gluten-free!
