Healthy Fudge Bites

These fudge bites are a great guilt-free way to satisfy your chocolate craving.


  There are days that I want chocolate, ok, most every day. The problem is I am trying to eat more healthy this year and once I give into my sweet tooth and make something like cookies, I tend to eat too many. So when I saw this recipe for fudge bites that were made with healthy ingredients, I just had to make them. I knew that I had to sprinkle some salt on top of the chocolate fudge as chocolate just tastes better with salt. I don't know who discover combining salt with chocolate but they are awesome in my books. The salt just brings out a wonderful taste. You just have to try these delicious salted fudge bites as they are loaded with healthy ingredients like almonds, avocado, oatmeal, and coconut oil. They also are lower in sugar but still taste amazing. I think the baobab powder and maple syrup just give the perfect sweetness to these gooey fudge bites. With all these healthy ingredients, you can eat more than one and not feel one bit guilty.

Healthy Fudge Bites

Ingredients

For the base

     6 tbsp almond butter
2 tbsp coconut oil
4 tbsp maple syrup
1 cup of rolled oats
4 tbsp almond flour
1 tsp cinnamon

For the chocolate fudge topping

2 large banana
4 tbsp almond or coconut milk
1 avocado
6 tbsp cacao powder
2 tbsp coconut oil, melted
6 tbsp maple syrup
1/2 cup chocolate nibs or chocolate chips
sea salt for sprinkling on top of bites, optional but delicious

Method

Line a square baking pan with parchment or wax paper.
Place the almond butter, coconut oil and maple syrup in a pan and gently melt.
 Remove from the heat and stir in the oats, almond flour, and cinnamon. Stir well to combine, then press evenly to cover the bottom of the baking pan. Freeze while you make the topping.
 For the topping, simply place all of the ingredients in a blender and blend until thick and smooth.
Pour this over the base to cover, spread out evenly and sprinkle some salt on top. Now freeze for at least 4 hours or until firm.
Remove from the freezer and gently lift out the bars by lifting the parchment/wax paper and slice into bars/squares. 
Keep any remaining slices/squares in a container in the freezer for up to 1 month.

Hmm I need to look into these, because i will admit it I'm a piggy I love to eat chocolate every day I can't help myself!!! Especially at night, no matter how much I try to eat healthy its like chocolate just calls my name, thanks for sharing, lol.

WOW I LOVE learning about new things especially when it comes to healthy alternatives and additives and I have never heard of Baobab power until now! Oh and YES whoever combined salt with chocolate IS AWESOME!

It sure sounds like a lovely dessert to have especially after a hearty dinner. I think it's nice that it doesn't contain too much sugar and anything oily like butter. This is a must try!

Thanks for introducing us to a new healthy product to try. Honestly, this is the first time I've heard about the Baobab powder. I only know about the tree (from the book, "The Little Prince.") The recipe is interesting enough to try. Have to get that powder first.
