Healthy Double Chocolate Protein Gluten Free & Vegan Brownies

These decadent brownies are so delicious and healthy!


My 11-year-old son loves black bean brownies and asked me to make them. This is my picky eater child who will not eat beans in a taco but will eat them in these rich & decadent chocolate brownies. So I decided that he had earned enough brownie points and made him a batch of these healthy brownies. What mom can say no to a dessert that is loaded with protein? If my son wanted to eat these moist chocolaty brownies for breakfast, I would let him as they are that healthy. These brownies are a perfect guilt-free treat that I enjoy with my coffee. They have plenty of chocolate flavor in them to satisfy my cravings for my got to have chocolate moments.


 These brownies have a secret ingredient that is also great for digestion. I secretly added my favorite vegan protein powder to my black bean brownies and my son had no clue as they still tasted delicious in his mind. So my son got some needed extra protein along with some digestive support. My son also got some needed fiber into his gut from the omega-rich chia seeds. My picky son does not eat enough veggies so fiber is always good for him. My gluten free friends will love these brownies as I used no grains in this recipe. I also made them vegan as I do not eat meat and I am trying to consume less dairy. Yes, they do make vegan chocolate chips that taste good!

I used the same vegan protein powder that I used in my Chocolate Peanut Butter Pretzel Protein Pudding as this protein powder has a great chocolate flavor. You can find Genuine Health products at stores like Sprouts and online.



I alter the below recipe just a bit as I just received some chocolate products from 
American Heritage Historic Chocolate and wanted to have the rich decadent chocolate that the product has. My kids and I loved the Chocolate Drink and the Chocolate Bites so I knew they would give amazing flavor to my brownies. I substituted 1/3 cup of the Chocolate Drink for the cocoa powder. I also cut the Chocolate Bites into small pieces and used those instead of the vegan chocolate chips. The American Heritage products are vegan.



Gluten Free & Vegan Double Chocolate Protein Brownies
                                   Makes 12 squares 

Ingredients

1 15oz can black beans, rinsed/drained
1/3 cup cocoa powder, unsweetened
2 scoops Chocolate fermented vegan proteins+
4 tablespoons coconut oil
2 chia eggs: 2 tablespoons chia seeds + 6 tablespoons water-combine and let sit for 2 minutes
1/4 cup water
1/4 cup honey
1 teaspoon chocolate extract 
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/8 teaspoon salt
1/3 cup vegan chocolate chips

Instructions

Preheat the oven to 350 degrees F.
1. Add all of the ingredients, except chocolate chips, into a food processor.
2. Blend until completely smooth, scraping down the sides as needed.
3. Spray a 9x 13" baking dish with nonstick cooking spray.
4. Pour the batter into the prepared dish and spread it out evenly.
5. Sprinkle the chocolate chips on top of the brownies.
6. Place the dish in the center of the oven and bake for 30- 45 minutes or until a toothpick inserted in the center comes out clean.
7. Remove the brownies from the oven and let them cool in the pan for 15 minutes.
8. Using the parchment paper, lift the brownies out of the pan and place them on the counter.

High five I don't eat meat either, I am a vegetarian who eats a lot of vegan food. And these vegan brownies look so heavenly you wouldn't even think that they don't have dairy in them! Yum yum.
