It may be summertime and most people are not thinking about making cranberry sauce. Most people probably can't even buy fresh cranberries as they are seasonal in grocery stores. Most stores only sell dried cranberries in the summer. So why am I making homemade cranberry sauce in the summer? The reason is that I found a couple of bags of fresh cranberries in my deep freezer so I decided to make some fresh cranberry sauce so I could replace the dried cranberries that I have been enjoying in my smoothies.

Dried cranberries taste amazing in smoothies but I don't like all the sugar that is in dried cranberries. Eating dried cranberries is like eating candy. Also, the cranberry pieces get stuck in my straw. I know I should just make a smoothie bowl with dried cranberries. So making low-sugar cranberry sauce is a better option for my morning protein smoothie. That way I get the tart cranberry taste without all the sugar. I also will not have to worry about tiny pieces of dried cranberries in my straw.

Most people think of cranberry sauce at Thanksgiving but not me, as I love eating cranberries and cranberry sauce year-round. So I always grab a couple bags after the winter holidays to store in my freezer. Yes, you can freeze fresh whole cranberries. Just toss the whole package of cranberries in the freezer, no need to rewrap them. Fresh cranberries are awesome in quick bread recipes. I could have used my cranberry discovery for bread but I have plenty of bread right now as my kids made Frog bread and I made 60-minute white bread. My boys have been on a baking streak and they also made one bowl vegan peanut butter cookies.
The cranberry season is fairly short; harvest begins in September and continues into November. So stock up on them and store the bags in the freezer to use throughout the year. Whole fresh cranberries and homemade sauce freeze beautifully!
Cranberry sauce may be an essential Thanksgiving side dish but it can be enjoyed year-round without having to stock up on cans of cranberry sauce. I am not a fan of the canned cranberry sauce especially when homemade cranberry sauce is so easy to make in the pressure cooker. So you can enjoy cranberry sauce on turkey sandwiches any day of the week.
The pressure cooker saves time
I love using my pressure cooker, which is similar to an instant pot, as it saves me so much time. I can make dried beans in my pressure cooker in 40 minutes and have cooked garbanzo beans for my vegan tuna salad. The pressure cooker makes preparation nearly effortless and it is less messy than cooking on the stovetop. So you will love making DIY cranberry sauce in the instant pot as it will not splatter and make all over your kitchen.
This pressure cooker recipe for cranberry sauce takes less than 20 minutes
Ingredients Needed
+ Fresh Cranberries
+ Orange Juice
+ Monk Fruit or Stevia
Cranberry sauce and smoothies
I love using cranberry sauce in my daily smoothies. I add 2 tablespoons of my low-sugar cranberry sauce to my protein smoothie. The best flavor combinations for smoothies are:
+ 1 orange + 2 tablespoons cranberry sauce + vanilla protein powder
+1 cup blueberries + 2 tablespoons cranberry sauce + vanilla protein powder
+1 cup sliced strawberries + 2 tablespoons cranberry sauce + vanilla protein powder
+1 cup sliced peaches + 2 tablespoons cranberry sauce + vanilla protein powder
Tips and uses
+ The cooking time of 20 includes the time it takes for your pressure cooker to heat up and release pressure.
+ Leftover cranberry sauce can be stored in a covered container for 14 days in the fridge or in the freezer for 6-12 months.
+ Cranberry sauce can be used as a jam on peanut butter sandwiches or on toast.
+ Add a couple tablespoons of cranberry sauce to a smoothie for a sweet-tart cranberry flavor.
+ If you desire a sweeter cranberry sauce add 1/4 cup more of sweetener. For a more tart cranberry sauce use 1/4 cup less sweetener.
Recipe variations
+ For additional flavor, add 1/2 cup of other fruits like strawberries, raspberries, or blueberries, fresh or frozen.

Low Sugar Cranberry Sauce Made In The Pressure Cooker
Yield: 2 cups
A sweet-tart ruby red sauce that is perfect with turkey. This sweet sauce is also a great substitution for jam or adds awesome flavor to smoothies.
Ingredients:
- 1 (12 oz) package cranberries, fresh or frozen
- 1/3 cup orange juice or water
- 3/4 cup sugar substitute, I like a monk fruit blend like Lakanto
Instructions:
- Rinse the cranberries and pick them over, discarding any mushy or damaged berries. Add the cranberries to the Instant Pot or pressure cooker.
- Add the orange juice and sweetener.
- Gently stir to combine the ingredients.
- Lock the Instant Pot lid in place and set the vent to sealing. Choose the manual setting, high pressure, for 2 minutes, and press start. When done cooking let the pressure release naturally for 10 minutes, and then move the vent to release the remaining pressure.
- Set the pot on saute and cook for another 2 to 3 minutes, stirring frequently, until thickened. The sauce will also thicken more as it cools.
- Transfer the cranberry sauce to a storage container and cool completely. Refrigerate up to 14 days. This sauce freezes for up to a year.
Notes:
For additional flavor, you can add 1/2 of a cup of blueberries, strawberries, or raspberries, fresh or frozen when you add the other ingredients.

A pressure cooker is similar to an intstant pot. My pressure cooke is an electric one. I am not sure if you can make this in a stovetop pressure cooker.
