Cranberry Maple White Chocolate Bars



  My youngest child loves granola and eats it straight out of the container. He also loves it in his yogurt. Yogurt and granola are his favorite bedtime snack. So when I received some packages of delicious granola from Viki's Granola, I had to hide them from my hungry 8-year-old son. It seems like that boy is always hungry. I hid the granola as I wanted to make a yummy treat with it. When I saw the package of Viki's Maple Cranberry Granola, I knew that I wanted to make some kind of bars with it. I knew that white chocolate and cranberries taste so good together so I searched through recipes for granola bars and was very frustrated when most of them had peanut butter in them. I like peanut butter in cookies but thought that it would taste nasty with cranberries. So I decided to melt some white chocolate and stir in the granola and cranberries to see how that would taste. My delicious bars are kind of like a mixture of granola bars and chocolate bark. They are simply delicious! They are so easy to make and require no baking. Using a package of Viki's Granola was a terrific idea.


  Viki's also sent me a package of Blueberry Almond Granola and I will be the nice mom and let my son enjoy that package. I love that Viki's granola is made with all natural ingredients and is gluten-free. This granola is also low in sugar so my son can enjoy it with his yogurt. If he wants to sneak some out of the bag, that is fine with me too. This yummy granola also has protein and fiber in it which are perfect for my growing boy. This delicious granola is also GMO-free which is awesome. I am trying to buy more products that are GMO-free and I love that more companies are choosing to make their products without GMO'S in them. If I have a choice between two products, I will always choose the one with no GMO'S and I want my food to be as natural as possible. The more I learn about GMO'S the more I stay away from them.

Cranberry Maple White Chocolate Bars

Ingredients

1 12 oz package white chocolate chips
1 1/2 cups Viki's Maple Cranberry Granola
1 cup dried cranberries
 extra dried cranberries for topping the bars

Directions
1. Line a square baking dish with parchment paper.
2. Place the white chocolate chips in a large microwave-safe bowl. Then melt the white chocolate chips in the microwave on high for 1 1/2 minutes. Stir and microwave in 30-second increments until melted.
3. Once the chocolate is melted, add the granola and dried cranberries and stir to combine.
4. Spread the mixture into the prepared baking dish.
5. Sprinkle the extra cranberries over the bars, if desired.
6. Refrigerate for about 40 minutes, until set.
When the bars have set, cut into pieces and store in an airtight container in the refrigerator.

All my favourite things in one bar - i eat grail straight from the packet too. And white chocolate is so much better than milk or dark - these look really delicious!

Oh this is a nice one to try. I love cranberries but not on the same level with blueberries and almonds. I'd try making these white chocolate bars using the blueberries and almonds variant. :)
