How To Make Beet Powder From Fresh Beets

 This past year, I discovered beet powder and I love adding it to my healthy protein smoothies several times a week. I just love the amazing purple/pink color that beet powder adds to my smoothies. After the pretty color, beet powder is a superfood supplement that is full of amazing health benefits. I will talk about the health benefits of beet powder later in this article.

 Since I was using beet powder on a regular basis, I decided to grow beets in my garden. I had visions of an abundance of beets from my garden that I could make into beet powder. When my beet seeds started to sprout, I was super excited. While I could not see the purple beets growing under the ground, I saw lots of beet leaves growing.

 My garden gave me plenty of beet greens but sadly just a few small bite-sized beets. While the beet greens were super delicious, in my opinion, better than spinach or kale, I was hoping for some big beets. I think that my soil may not have been deep enough in my swingset garden.  So I made a plan for next year's garden to make my garden deeper.

 Then I received a blessing of beets from God. My husband and I run our church food pantry. Last month, the Road Runner Mobile Food Pantry delivered a pallet of fresh beets. I am talking about at least 75 bags that contained 25 pounds of beets. I did not count but it was a lot of beets.


 One of the perks of working at a food pantry is taking home leftover food items that can not be used at the following food pantry event. So after we served all the people at the food pantry and I begged the volunteers to take some beets, we had way too many bags of beets left over. So, I had my sons load several bags of beets into the car. I was super excited that I could make beet powder.

 I hate to see food being wasted and knew I had to rescue these beets so they would not end up in the landfill. So I placed all the beets in my garage and thought of all the ways that I could cook beets. While I wanted to fill my freezers with plenty of roasted beets, I did not have much space in my two deep freezers. So I knew that the best use of fresh beets was dehydrating them into beetroot powder. 


 I had never dehydrated beets before. When I buy beets, my favorite way to cook them is in the pressure cooker. Cooking beets in the pressure cooker is so simple. So I did a search online on how to make beet powder. I discovered that the first step to making beet powder is drying the beets into beet chips.

How to dehydrate beets

 Dehydrating beets is so simple. If your oven temperature can be set to 200 F, then you can dry the beets in the oven. You simply peel and slice the beets into thin slices. Then you place the beet slices on cooking sheets and place them into the oven which is set at 200 F. The drying of the beets can take 10 or more hours. So choose a day that you will be home to dehydrate the beets. 


 The beet chips are done when they are brittle and can be easily be snapped into pieces. It is the crispy beet slices that you will use to make the beet powder. The best part of drying beets into beet chips is you can't over-dry them. So, if you don't mind the oven on while you are sleeping, then have the beets dehydrate overnight. I have left the house for a couple of hours while my beet slices were in the oven. 


Dehydrated beets also make a tasty snack

While I was dehydrating my beet slices, I discovered that dried beet chips make a tasty snack. You can eat the dried beets just like chips. The dried beet chips have a nice sweet taste to them. My husband even enjoyed snacking on the beet chips. It was then, that I decided to store the dehydrated beet chips and just make my beet powder as needed. Dehydrated beets can last for years when stored properly in air-tight containers. 

Steps for dehydrating beets

+ Wash and scrub the beets

+ Slice off both ends of the beet

+ Peel the beets

+ Slice the beets into thin slices

+ Place on cookie sheets in a single layer

+ Set oven to 200 F

+ Place the beets in the oven for 8 or more hours

+ Beets are dried when brittle and can be easily broken

+ Let the beet slices fully cool before storing

+ Store in containers with tight lids 


Beet chips to beet powder



Once your beet slices are dried, then they can be made into beet powder. I like to use a clean coffee grinder to make the beets into beet powder. So grab your coffee grinder and clean out all the coffee residue. Then place a couple dried beet slices into the coffee grinder. If your beet slices are big, break them into pieces before you place them into the grinder. Then grind the beets, like coffee beans, until you don't hear any beet chips hitting the sides of the coffee grinder. 

 Slowly take off the lid to the coffee grinder as beet powder will fly into the air. The beet powder will be messy, so open the coffee grinder over a bowl. My advice is to just grind up enough beet powder to last for a month. Homemade beet powder will turn brown after a couple of months. The dried beet chips will last longer in storage.

+ Eat as a snack

+ Toss into homemade soup

+ Grind into beet powder

+ Toss a couple beet chips into a smoothie

+ Add to pancake batter - 2-4 tablespoons

I like to joke that I have made beets in 100 different ways but I think I have eaten beets this past week in about 10 different ways.   3. With a sharp knife or a food processor, slice the beets into thin slices.
  4. Place the beet slices on cookie sheets, in a single layer.
  5. Place the beets into the oven set to 200 F.
  6. Bake them for 6 or more hours.
  7. The beets are dried when they are brittle and can be snapped into pieces.
  8. Let the beet chips cool before storing in air tight containers.

This is great information! I dumpster dive and do food rescue, and there are always tons of beets. Now I know something new to try :)
