No, it does not taste exactly like an omelet made from eggs, but this vegan omelet has the texture of an omelet. The gooey vegan cheese and the spinach make for an incredible vegan meal that will fill you up. One bite and you will be asking for more. Eating a vegan diet has never been so delicious.

 I follow a mostly vegan, plant-based diet, but there are several foods that make it hard for me to eat strictly plant-based. Having a dairy allergy makes it easy to not eat cheese or milk, but I still enjoy eggs and seafood. 

 I have nothing against people who consume animal products; I just think that my body is healthier when I eat plant-based foods. I try to eat eggs and seafood once a week and then eat plant-based meals for the rest of the time.

 Since I have so many food allergies, I am not strict when it comes to consuming food products with eggs in them, especially when I eat outside of my home. My food allergies to dairy, soy, and mushrooms are complicated enough that I am not picky when eating at restaurants or a friend's house. I  have to avoid my food allergies as one bite can cause a major asthma attack that makes it hard for me to breathe.

 Since having to give up cheese two years ago after a food allergy blood test revealed that dairy was the cause of my severe asthma symptoms, I decided that I wanted to heal my body even further and started consuming fewer animal products. 

 I even started to explore a keto food plan, but I did not like the side effects of the keto diet and the fact that it had a heavy emphasis on meat. I do include some vegetarian keto meals in my diet, and I use a keto protein powder but I have no plans to go full keto at this time. I like my carbs and bread. I also feel that I need the energy from carbs to maintain my workouts, like running.

 Now that I have the desire to eat more vegan meals, I am exploring vegan recipes that make good substitutes for my favorite meals that have eggs and seafood in them. I discovered a vegan recipe for tuna that tastes so similar to tuna salad and a recipe for a gluten-free vegan eggless quiche that uses chickpea flour instead of eggs. So I am learning that cooking vegan is not that hard and that plant-based meals are delicious.

Chickpea flour makes a great egg replacer



 Chickpeas are loaded with protein, so they are awesome for so many meals without meat. I love using chickpeas in homemade hummus, so I always have several cans of chickpeas in my pantry. I also keep dried chickpeas or garbanzo beans in my pantry as they are not that hard to cook; they just take time to cook. 

 So when I am planning several meals that have chickpeas in them, I will cook chickpeas in my pressure cooker for a faster cooking option. That way, I have plenty of chickpeas to make my easy roasted garbanzo bean snack. The best way to use dried garbanzo beans is to make chickpea flour.

 Sure you can buy chickpea flour in the store but that stuff is so pricey. Once you see how easy it is to make chickpea flour from dried garbanzo beans you will never buy chickpea flour again. Chickpea flour is the main ingredient in this vegan omelet as it makes a great substitute for eggs. There are many other ingredients that make great egg substitutes for when you are making recipes like cookies.

A non-stick pan is a must for vegan omelets


 Since this vegan recipe or omelet does not use real eggs, the mixture has a tendency to stick to the pan. So I recommend using a non-stick pan when cooking vegan eggs. If you are worried about the toxic chemicals in non-stick pans, you need to check out this safer ceramic-coated nonstick frypan that needs no oil when cooking your favorite foods.  I like adding spinach and cheese to my vegan omelet. Of course, I use vegan cheese as I have a dairy allergy. I always have frozen spinach in my freezer so I decided to use frozen spinach in this vegan dish but you can use fresh spinach in your vegan egg omelet. You can omit the spinach and add other omelets toppings like diced red peppers, tomatoes, onions, etc. You can also make this vegetarian omelet without any veggies if you like. The choice is up to you. I like to top my meatless omelet with sliced avocado and salsa. Ketchup is also a good egg topping.



The best vegan omelet ever!

 I am not 100% vegan yet and still eat eggs but this vegan omelet tasted so much better than a real omelet. It had an incredible mouthfeel and the taste was awesome. I will be making vegan omelets more often. The plant-based ingredients were easy to mix up and it cooked up just like a real omelet. I will make sure that I always have a batch of chickpea flour in my pantry so I can whip on this delicious plant-based omelet when I have a craving for eggs.

Vegan Spinach Cheese Omelet Made From Chickpeas

Yield: 2-3

A satisfying vegan omelet that is so delicious and looks so much like the real thing.

ingredients:

  • 1 tablespoon flax meal + 3 tablespoons water
  • 3/4 cup plant-based milk
  • 2 tablespoon nutritional yeast
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1 cup chickpea flour
  • 1 tablespoon potato starch
  • 1 tablespoon coconut oil – for frying
  • Filling ingredients
  • 1 cup cooked spinach leaves
  • 1/2 cup vegan cheese

instructions:

How to cook Vegan Spinach Cheese Omelet Made From Chickpeas

  1. In a bowl, mix together the 1 tablespoon flax meal + 3 tablespoons water and let sit for a couple of minutes to thicken.
  2. Then add all the other ingredients, except the coconut oil and the filling ingredients. Mix well and let the "egg" batter stand for 5 minutes. The batter should be the consistency of thick pancake batter so add more water if needed.
  3. Heat a non-stick pan up over medium heat and add the coconut oil. Then pour about a 1/2 cup of batter into the hot pan. Spread the batter around the pan taking care that the omelet isn’t stretched too thin or it will break when folded. Leaving the batter on the thick side is ok as it will make a nice thick omelet
  4. Allow the omelet to cook for a couple of minutes.  When it looks like the texture of a pancake right before flipping it, then it is time to add the fillings. Place some of the spinach and cheese on top of one side of the omelet.
  5. Use a spatula to lift the one side of the omelet and fold it over. Then use your spatula to press down from the top to seal it. Flip the omelet over to make sure it is golden brown on both sides. If needed cook for a bit longer.
  6. Allow the omelet to cook for a couple of minutes and then remove from the pan. Repeat the steps for the rest of the batter.

NOTES:

You can add other toppings to the omelet like fresh spinach, tomatoes, diced peppers, or any other favorite omelet ingredients.

  I discovered a red cooking device that makes a perfect omelet. The Red Copper 5 Minute Chef also cooks many other things like chocolate pancakes and cake. It is a small appliance that my younger boys are allowed to use, as I do not allow them to use the stove just yet, as we have a gas stove. I am afraid that the boys would not turn on the gas correctly. The Red Copper Chef is easy for my boys to use, as all they have to do is plug it in and wait for the green light to turn on. I have taught my boys how many minutes it takes to cook pancakes so they are able to cook their own breakfast.

This cooking device for one makes the most amazing egg foo young in minutes. This appliance is so easy to use. Just mix the ingredients and pour into the cooker.  Since the Red Copper 5 Minute Chef makes cooking so easy, I knew that I had to try other recipes in this cooking device. I thought about a recipe that I love to make, but it is hard to make. The recipe that came to my mind was egg foo young. I love egg foo young, but when I make it at home, it never looks as good as the ones I get from Chinese restaurants.

 I have a recipe that tastes just as good as Chinese takeout egg foo young, but I wanted to see if the 5 Minute Chef could make it look good too. So I made my egg foo young recipe and poured some into the red cooker.



Never latch The Red Copper 5 Minute Chef 

I am not sure why there is a latch on the Red Copper 5 Minute Chef. When I first used this device, I made the mistake of latching it while cooking eggs, as I thought the video that I watched told me to do so. Big mistake! I must have overfilled the cooker, or the pressure must have built up inside. When I opened up the Red Copper 5 Minute Chef, it exploded and I had eggs everywhere. So even if you come across directions to latch the red cooker, do not, as it just might explode eggs all over your kitchen.


 My egg foo young recipe has many different oils and sauces in it so it may seem complicated. The recipe really needs all these ingredients for the best flavor and once you measure them all out, the rest of the recipe is simple. The only part that is not so simple is forming the egg foo young into nicely shaped patties. When I make the recipe in a regular pan, the patties may look funny, but they still taste delicious.

Egg Foo Young
                                                        Makes 6-8 patties
                                              6 large eggs
                                              1/2 cup vegetable broth
                                              1 1/2 cups bean sprouts
                                              1/2 cup shredded carrots
                                              1 scallion, finely chopped
                                              2 garlic cloves, finely chopped
                                              1 tablespoon oyster sauce
                                              1 tablespoon soy sauce
                                              1 tablespoon sesame oil
                                              1 tbsp vegetable oil
                                      Foo young sauce
                                            1 cup vegetable broth
                                            2½ tablespoons soy sauce
                                            2 teaspoons rice vinegar
                                            2 teaspoons sugar
                                            1 tablespoon of cornstarch dissolved in 1 tablespoon of water
                                            1 teaspoon sesame oil
                                            1 tablespoon oyster sauce

Instructions
  Whisk the eggs in a bowl and add vegetable broth, mushrooms, bean sprouts, carrots, scallions,  garlic, oyster sauce, soy sauce, and sesame oil. Stir until all the ingredients are evenly coated. Set aside and make the sauce.

  Combine all sauce ingredients in a small pot and bring to a boil, stirring often. Turn the heat down to low and simmer for two minutes, stirring a couple of times. Take the pan off the stove and set it aside so you can prepare the egg foo young patties.

  Heat up the 5 Minute Chef and lightly coat it with the vegetable oil. Once the Red Copper has warmed up, fill it up with the egg mixture. Make sure to get plenty of veggies in the cooker. Then close up the Red Copper pan-do not latch it, and cook for six minutes. 

Slowly open up the Red Copper cooker to see if the eggs are cooked and brown. If not, close it back up and cook for another minute. Take the egg foo young patty out and continue this process until all the mixture is used.

  Warm up the sauce, if needed, and pour over the Egg Foo Young patties.

 My boys loved that they could enjoy corn dogs without having to visit the drive-thru place near our house. Since this recipe is a bit healthier, it also means that my boys can enjoy corn dogs more often, especially if I use turkey dogs in the cornbread mix. Sure they may not look like regular corn dogs but they still taste yummy. I can also make this corn dog recipe vegetarian & dairy-free if I use veggie dogs and plant-based milk in the recipe.


 To make the corn dogs in the  Red Copper 5 Minute Chef all you need is hot dogs and a package of cornbread mix. If you want to make the cornbread from scratch, you can do that also like I did as I had cornmeal in my pantry. You will also need other ingredients like eggs, oil, and milk if you buy a cornbread mix. Making cornbread from scratch is easy too as all you need is a box of cornmeal and other simple ingredients like baking powder and salt. So if you make a lot of cornbread then buy the ingredients but if you just want to try the recipe, then buy a cornbread mix.

  I love using it for quick meals. The other day I made eggs in it and last night, I made my husband a chicken breast to pack in his lunch. The small cooker cleans up so fast too. If you don't have a Red Copper 5 Minute Chef then you should get one. If you want to make baked corn dogs without this red device, then just bake the hot dogs in the cornbread following the directions on your cornbread mix as it still tastes so delicious. My family really loves this healthier way of making corn dogs.

Easy Corn Dog Recipe In The Red Copper 5 Minute Chef 

One package of cornbread mix 
One package of hotdogs
Additional ingredients listed on the package of cornbread mix

Make the cornbread mix following the instructions on the package. Fill the bottom part of the Red Copper with enough cornbread batter leaving about a half-inch space. Place two hotdogs in the batter and close the lid. Let cook for five minutes. You can also cut the hotdogs into pieces. Repeat the above steps until you use up all the cornbread batter.

Roasted Rainbow Brussels Sprouts

Looking for a special side dish for your holiday meal? This dish is so pretty and healthy. It is perfect for your holiday menu. Even people who dislike veggies will enjoy this dish.

This delicious vegetable side dish is the perfect combination of sweet roasted veggies with a sweet balsamic glaze.


  Now that the weather is cold, I have been working out at the gym more. My favorite machine to use at the gym is the elliptical machine as it works out my whole body and feels like running to me. I like that this exercise machine has a TV connected to it so I can watch the Cooking Channel as I get my workout in. Lately, The Pioneer Woman has been the show that I have been watching as I get my miles and minutes in. 

 I have been enjoying her holiday recipes for inspiration on what to cook. The week before Thanksgiving, she was making a Brussels sprout dish that looked so delicious, so I knew that I had to create this recipe as I love Brussels sprouts. Her dish was also so pretty with the different colors. I looked up The Pioneer Woman's recipe on her website when I got home from the gym and then made some modifications to the recipe. I substituted Malaysian palm oil for the olive oil, and it gave the dish a nice buttery taste as well as extra health benefits. 

I made these Brussels sprouts for Thanksgiving, and they were so delicious. I think Brussels sprouts are my favorite vegetable. My husband loves it when I make maple-roasted Brussels sprouts for dinner.

Comes from the fruit of the oil palm tree

  I discovered palm oil at a conference that I went to last month, and I really loved the way it tasted on popcorn. So I have been experimenting with the oil in my cooking and baking. Malaysian palm oil has a nice orange color to it, so while it makes my popcorn beautiful, it did not work in my chocolate chip cookie recipe that well. The cookies tasted great, but I did not care for the orange color that they had.

 So, for now, I will just be using palm oil in recipes other than baked goods. I really like the buttery taste that the palm oil gives to my food, and the health benefits are pretty amazing too. Palm oil is a natural source of Carotenoids and vitamin E, as well as fatty acids and other important fat-soluble micronutrients. I have found that palm oil is great for sauteing and when I make eggs. This buttery oil tastes amazing on potatoes!


I learned a new way to make a balsamic glaze

 Watching the Pioneer Woman has had other benefits as I learned a new way to make a balsamic glaze that does not involve me getting a second-degree burn. The last time I reduced balsamic vinegar to a glaze, I splattered a drop on my thumb when I tried to pour it into a bowl. That drop formed a nice blister that hurt so much and took 2 weeks to heal. So I like the recipe from the Pioneer Woman's website as she uses plum or peach preserves along with brown sugar and balsamic vinegar. This results in a glaze that does not harden so I can let it cool down and avoid burning myself.

Cutting the butternut squash is so simple

Step 1: Cut off the ends


 Step 2: Cut the squash in half and scoop out the seeds


Step 3: Peel off the skin, cut the squash into strips, and cut them into chunks.


Peel and cut the onion into pieces. 
Slice off the ends of the Brussels Sprouts and then slice in half.

Roasted Rainbow Brussels Sprouts 

INGREDIENTS

1-1/2 pound Brussels sprouts, trimmed and halved
1 whole small butternut squash, peeled and cubed
1 whole large red onion, peeled and cut into wedges
2 tablespoons Malaysian palm oil or olive oil
1 teaspoon salt
1 teaspoon pepper
1 tablespoon fresh rosemary
1/4 cup dried cranberries
1/4 balsamic glaze- see recipe below

INSTRUCTIONS
Preheat the oven to 425 degrees.

1. Place the vegetables in a bowl with the Malaysian palm oil and stir them to coat well with the oil. Stir in the salt, pepper, and rosemary.
2. Spread the vegetables on an oiled baking sheet or one that is covered with a silicone sheet.
3. Roast for 25 minutes or until slightly brown.
4. Remove from the oven and place in a serving bowl, and sprinkle the dried cranberries on top. Drizzle the balsamic glaze over the veggies. Serve immediately for the best flavor.

Balsamic Glaze
1 cup balsamic vinegar
1 jar (15 Ounces) peach preserves
2 tablespoons brown sugar

INSTRUCTIONS
In a blender, puree the balsamic vinegar, peach preserves, and brown sugar until smooth. Pour into a small to medium saucepan and bring to a boil over medium-high heat. Turn the heat to simmer and cook until the mixture has reduced by half. It should be fairly thick and will thicken further as it cools. Remove from the heat and pour into a heatproof bowl. Drizzle about half or more, depending on your preference, of the glaze over the Brussels Sprouts. The rest of the glaze can be stored in the fridge after it cools down. To use the glaze in another dish it may need to be warmed up. This glaze is also wonderful on pizza or a sandwich. The Pioneer Woman uses it over tomatoes, basil, and mozzarella cheese.
