Dairy Free Blueberry Lemonade Energy Bites

When I was a kid, I remember a raspberry coconut snack cake that was pink and had the word zing in it. Those pink cakes were my favorite and may have been the reason I was a chubby kid. I really loved the raspberry taste that that unhealthy snack had but as a kid, I had no clue about nutrition or chemicals in food but I do remember being chubby and stomach pains all the time. This mom does not want that for my boys so I am glad that I discovered a way to make a sweet treat that is loaded with superfood goodness and prebiotics for gut health. These bites are made with delicious blueberries, vitamin C-rich fresh lemon juice, vitamin E-rich sunflower seeds, and energizing coconut. They also have a great taste of summer berries thanks to my secret ingredient.

 I made these sweet balls of deliciousness in my food processor with ingredients that I had in the house. So there was no need for a grocery store trip. I always have plenty of the Fermented Organic gut Superfood in my pantry as I use it daily in my morning vegan protein smoothie. Right now I have plenty of apricots in my freezer so I have been enjoying dairy-free apricot smoothies for breakfast. I love friends who have fruit trees! These yummy energy bites are also dairy-free which is a plus for me as I had to recently eliminate dairy from my diet due to a severe milk allergy that was causing my asthma to be out of control.



Blueberry Lemonade Energy Bites
Ingredients                     Makes: 48 energy balls
1 cup frozen blueberries
1/4 cup lemon juice
1 cup chopped dates
1 cup unsweetened coconut flakes
1 cup sesame butter- I like this brand as it has chia seeds in it
1 cup oatmeal
1 tablespoon vanilla extract
1/4 teaspoon salt
3 scoops fermented organic gut superfoods+ summer berry pomegranate
Extra coconut flakes for rolling the energy bites in
Directions
1. Add all ingredients to the food processor and blend until smooth and well combined (scraping sides with a spatula when necessary). This mixture will be wet and sticky.
2. Place mixture in the fridge for about 30 minutes so it can firm up.
3. Roll the mixture into balls, mixture will be sticky, and then into coconut flakes
4. Place in the fridge to firm up
5. Keep in an air-tight container in fridge or freezer.

These energy balls are like my FAVORITE thing ever! Easy snack when we're on the go, and always bound to leave me feeling fueled but not run down. Blueberry lemonade sounds like my next recipe though because that has to be DELICIOUS!

I like the way you led with your (unhealthy) fruit treat you enjoyed as a child, but then transitioned your memory into a healthy version for yourself and your kids. Blueberries with lemon is one of my favorite flavor combinations. Yum!!!!

Oh my goodness, these look delicious - and like "goodness" in a ball! Kind of like a healthier version of munchkins! ;-) I use Superfoods powder when I make smoothies; didn't think of using it in baking.
