 There is something special about enjoying homemade bread fresh out of the oven. The bread is still warm, and when you spread the butter on it melts right away. The smell of bread baking in the oven is a scent that most people enjoy. 

 For someone who has a wheat allergy, it can be tough when you are not able to enjoy fresh-baked bread. I can remember the day that my wheat allergy was confirmed, and I had to face not being able to bake bread. Then I remember my first experience with store-bought gluten-free bread. I was shocked at the price of bread that was gluten-free. I was also disappointed in the texture of the wheat-free bread.

 I thought I would never be able to enjoy bread again. I was not giving up bread without a fight. So I searched for recipes for gluten-free bread and started baking. Many of the gluten-free bread recipes that I tried resulted in hard loaves of bread or ones that crumbled when you spread butter on them.

Then I discovered this recipe for buckwheat bread, and I was amazed at how this loaf of gluten-free bread was so similar to regular wheat bread. This bread had a soft texture and held up to me spreading butter on it.

You are going to love this gluten-free bread recipe. This is an easy bread recipe that takes around an hour and a half to make. The best part is that most of this time is for baking the bread. This is a no-knead bread recipe. It is a mix-and-pour the batter into a pan recipe. 


Ingredients Needed

~ Gluten-free flour blend

~ Buckwheat flour

Psyllium Husk Powder

~ Baking Powder

~ Yeast

~ Sugar

~ Salt

This is the easiest gluten-free bread to make. Just combine all the ingredients in a stand mixer or in a bowl with a spoon. The bread dough will resemble a thick cake batter. Then you simply pour the batter into an 8.5 by 4.5-inch one-pound metallic loaf pan. Since this is a yeast bread recipe, it needs to rise in a warm place for 30 minutes. Then you bake the bread. The hardest part of this recipe is waiting for the bread to cool down, so you can slice it.

Once the bread is ready to slice, you will be amazed at how it slices, just like traditional bread made with wheat flour. The buckwheat flour gives this bread an amazing texture and taste. This bread is perfect with butter or a sliced avocado.

~ Is buckwheat flour gluten-free? ~ Even though there is the word wheat in buckwheat, it is a gluten-free and wheat-free grain. 

~ Can I substitute other flours for the gluten-free flour blend? ~ I recommend using a flour blend like King Arthur gluten-free blend, as it has the starches, like tapioca, and xanthan gum in it. These ingredients are necessary for baking gluten-free bread. Other gluten-free flours like almond flour and garbanzo bean flour will result in a dense and crumbly loaf of bread.

~ What is Psyllium Husk Powder? ~ Psyllium is an ingredient that is used in many fiber supplements. This fiber mimics gluten and helps the bread have a softer texture. 

~ Can I use other vegan eggs? ~ While there are many recipes for egg substitutes, I recommend using flax meal or chia egg recipes. You can even use an egg replacer powder.  

~ Why apple cider vinegar? ~ The apple cider reacts with the baking powder to help the bread rise. If you don't have apple cider vinegar, you can use white vinegar.

~ How long will this bread stay fresh? ~ This bread will stay fresh for 3-4 days when stored in the fridge. 

~ Can I freeze the bread? ~ For longer storage, freeze the bread up to 4 months. The best way to freeze the bread is to slice it into desired slices and place them into a freezer bag. That way, you can just thaw a slice or 2 at a time at room temperature.

Soft & Moist Gluten-Free White Bread Recipe

 This gluten-free white bread recipe makes the best-ever gluten-free bread. The dough is so similar to traditional bread recipes. This gluten-free bread dough is so easy to knead and so moist. 


 I think my biggest frustration with following a wheat-free diet is the price of gluten-free bread as well as the texture. While I understand why gluten-free products cost more, due to strict guidelines, the cost of gluten-free bread makes it a luxury item for me.

The cost of gluten-free food is why I choose to make gluten-free recipes at home. Some homemade gluten-free products are simple to make, while others are more difficult, especially when it comes to making it similar to traditional products. Making homemade gluten-free bread has always frustrated me,

 Bread baking has always been my specialty with baking and when a wheat allergy forced me to stop eating bread, I was upset that I could no longer make homemade bread. Sure, I discovered recipes for homemade gluten-free bread but they did not have the texture that I wanted. Most of the gluten-free bread recipes made loaves of bread that were hard and dense or crumbly. For many years, I just lived without bread. 


Then I discovered Schar Artisan Bakers Bread, and my quest for a delicious gluten-free bread was over. This bread had the texture of traditional white bread, soft and chewy. As I was reading the ingredients of the Schar bread, one ingredient stood out. The ingredient was Psyllium.

What is Psyllium?

 Psyllium is an ingredient that is used in many fiber supplements.  I needed to know the benefits of psyllium in bread. So I did some research online and discovered that Psyllium Husk Powder was used in gluten-free baking as a substitute for gluten. This fiber mimics gluten and helps the bread have a softer texture. When you use psyllium in gluten-free dough, it gives the dough a kneadable texture. 


Adding Psyllium to Gluten-Free Bread Recipes Gave Amazing Results

With this new information about psyllium and gluten-free bread making, I gave wheat-free bread baking another chance. I was finally able to bake a loaf of delicious gluten-free bread with the addition of Psyllium Husk Powder. Psyllium adds extra fiber to the bread without changing the taste. Psyllium also adds a soft texture to gluten-free bread that I was craving.

Give homemade gluten-free bread additional moisture with a tangzhong

Now that I was baking to baking homemade bread, I was trying new gluten-free bread recipes. One gluten-free recipe had a new technique called tangzhong for achieving more starch and moisture in yeast bread dough.

How does this technique affect yeast dough? It pre-gelatinizes the starches in the flour, meaning they can absorb more water. In fact, the gluten-free flour will absorb twice as much hot water or milk as it does the cool/lukewarm water or milk you'd usually use in yeast dough.

Not only does the starch in the flour absorb more liquid, but it's also able to hold onto that extra liquid throughout the kneading, baking, and cooling processes. Which in turn means:

 ~ The bread dough is less sticky and easier to knead

 ~ The bread may rise higher, due to more water creating more internal steam (which makes bread rise in the oven, along with the carbon dioxide given off by the yeast)

How to make a Tangzhong

~ Take 4 tablespoons of gluten-free flour and 3/4 cups of plant-based milk and put them in a saucepan.

~ Over medium-high heat, cook the mixture, whisking constantly until it starts to thicken into a paste.

~ Remove from heat and bring to room temperature.

~ Add it to your other dough ingredients.



MCT Oil For Best Flavor and Health Benefits

 I discovered that MCT oil could be used in baking bread by accident. I was mixing up the ingredients for my gluten-free bread dough and discovered that I had no olive oil. The only oil that I had was a bottle of organic MCT oil. I usually use MCT oil in my Dairy Free Iced Bulletproof Coffee Latte recipe, but decided to try it in my bread baking recipe. 

 The MCT oil gave the bread a nice flavor, and I liked the additional health benefits. Most people use MCT oil for keto coffee for energy as well as mental clarity, but don't realize that you can use it in recipes. I am glad that I discovered that I could use this mild coconut oil in my baking recipes.

 I started composting several years ago in an old plastic kiddie swimming pool as a way to enrich my soil for my backyard swingset garden. My Southwest soil was mostly clay and not ideal for growing food. Since the Covid disaster had just started, stores had sold out of garden soil. I wanted to start a garden, to grow veggies, and composting food scraps was a way to enrich my soil.

 So I bought a metal kitchen compost bin and instructed my family on what to put in a compost bin. My son was eating lots of eggs, so he tossed all the egg shells into the bin for kitchen food scraps. Other items that went into the bin were coffee grounds and produce scraps. 

Over the years of composting food scraps, I have tried many types of compost buckets for the kitchen countertop. Here are the different types of compost bins I have used.

1. Stainless Steel kitchen compost bin ~ A stainless steel compost container is a 1.3-gallon container with a tight lid. They usually have a carry handle and a place in the lid for a charcoal filter. The benefits of a stainless steel bin are that they are durable and doesn't absorb odors from the food. They can be used with or without a compostable bag.

2. Bamboo kitchen compost bin ~ This type of compost bin is made from plant-based materials and is a more stylish option. The bamboo bin has a lid with a place for charcoal filters. They also do not absorb odors and are easy to clean in the dishwasher. They can be used with or without a compostable bag.

3. Recycled plastic kitchen compost binThis type of compost bin is a breathable system that allows food waste to dry out to reduce the ICK factor of collecting food scraps. Since the sides are ventilated, you must use a compostable bag inside the bin. Most plastic bins are dishwasher safe. If you have mold allergies, this is the best compost bin.

4. Compost Genie floor compost bin ~ This is a larger compost bin for the kitchen. This bin holds a 3.6-gallon compost bag instead of the typical 1.6-gallon compostable bag. Must-Have Items For Compost Bins

Once you select the kitchen composter that fits your needs, there are a couple of additional items that you will need to buy. 

~ The first one is charcoal filters for compost buckets. Charcoal filters will absorb odors and keep the bad smells out of your kitchen. Most compost bin charcoal filters are infused with 1.7g of activated carbon. These filters come in many sizes and can be cut to fit inside your compost container. The filters should be replaced every 2 months.

Compostable Trash Bags are another must-have item for kitchen composting. These food waste compost bags make it super simple to take the food scraps out to your compost pile. They are also required for municipal compost drop-off sites. 

While some compost buckets don't require a green waste bag, I don't recommend skipping this step. The green compost bag will reduce odors from the food scraps and prevent mold from growing inside the compost bucket.
