Egg Foo Young Frittata

I love eating Egg Foo Young  and found a wonderful recipe a while back. Making Egg Foo Young is time consuming as you have to cook each patty separately up to five minutes. I have five people in my family so that means making egg foo young for dinner can take up to 25 minutes standing over the stove. I decided to take the same ingredients that you use to make the patties and cook them in the oven. The result was a wonderful tasting egg dish or frittata. It tastes the same as egg foo you but it is so much easier to make and no more standing over the stove for  25 minutes.  You cook the ingredients in a baking  dish and cut it into squares. I added broccoli to my recipe but you can omit the broccoli or add other  veggies like carrots or mushrooms. I did not add any meat but the addition of cooked chicken, pork, or shrimp will make it taste just like egg foo you from the Chinese place. My husband likes the gravy the Chinese place puts on their egg foo young, while I do not. I included an easy recipe for the gravy too.

Egg Foo Young Frittata

12 eggs
2 teaspoons sesame oil
1 tablespoon +1 teaspoon Oyster sauce
4 tablespoons vegetable oil
3 tablespoons soy sauce
1 bag mung bean sprouts
2 cups chopped broccoli, fresh

Preheat oven to 400 F
Grease a 9 X 13 baking dish with vegetable oil. Combine all ingredients except the sprouts and broccoli in a bowl and mix well. Then add the sprouts and broccoli and combine well. Pour the egg mixture in the baking  dish.  Bake for 40- 50 minutes or until eggs are set and brown on top. Cut into squares and serve with gravy if desired.

Egg Foo Young gravy

1 cup brown gravy
1 tablespoons soy sauce
1 teaspoon oyster sauce
Mix the 2 ingredients together and microwave on high for 2 minutes.
