Kid-friendly Crispy Chickpea Nuggets

Check out these delicious Crispy Chickpea nuggets that are meat free.


  My boys love chicken nuggets but I think they are not the healthiest food for them. So I decided to make a meat-free version so they can enjoy those nuggets more often. These chickpea nuggets are easy to make and bake up in the oven/ not fried. These nuggets have the texture of chicken nuggets and a flavor similar to a mild hummus. I love all the meatless protein that my boys are getting. My boys love dipping these nuggets in barbecue sauce, dipping things into sauce makes everything taste better.  My boys sure love their dipping sauces and I think more ends up on their fingers and table than their mouth.


  I remember when my boys were little and the big messes they would make at meal time. Wait, have you looked at my floor, my boys still make messes when they eat but they are smaller messes. I can look back and laugh about the times my boys would throw their plate or bowl on the floor when they were done eating. I think I was mopping the floor after every meal.                   Crispy Chickpea Nuggets
           Makes 20 nuggets
          Ingredients
                 1 cup breadcrumbs
                 1 1/2 cup oatmeal
                 1 cup canned chickpeas, save the water
                 1/2 cup water from the chickpeas
                 1 teaspoon salt
                 1/2 teaspoon black pepper
                 1 teaspoon garlic powder
Directions
 Preheat oven to 375 F
 Toast the breadcrumbs on a baking pan in the oven until golden.
 Line a baking sheet with a silicone mat or lightly grease.
 In a food processor pulse the oatmeal until like powder.
Add the chickpeas and 1/2 cup of the reserved water along with the spices into the processor with the powder oats. Combine until it forms a paste.
Form the chickpea dough into 20 nuggets and coat with the breadcrumbs.
Place on baking sheet and bake for 17 minutes.

I love the placemats! I'm not sure I could get my 3 1/2 year old to eat the chickpea nuggets. She has a hard time with any new food sadly. Then again I'm not sure I would do any good with them either, I have texture issues too.

My daughter loves chicken nuggets too! Have to try your Crispy Chickpea Nuggets recipe to change her menu up a little bit! The Osho Dinner Dish looks super cool! I'm sure kids love it too!

My 2 year old loves chicken nuggets so I think he would also like the chickpea nuggets. He is such a picky eater, though. I love foods like this for toddlers because they usually eat them with no problem.

I would have never thought to use chickpeas to coat the chicken! That's such a genius idea! I might have to try this recipe soon, we eat tons of chicken so I'm always on the lookout for new takes on the classic!

I like the place mat. My grandson is now in that stage that he is exploring different kinds of food. He is past the mushy diet and now likes food that he can hold, pick up and put in his mouth. The place mat would be a good idea for him. I'm getting that.

My kids live on chicken nuggets and I hate that they eat them all the time. Although I'm sure they'd be able to tell the difference between these and regular nuggets, I still think I'll give them a try. Who knows? They may end up loving them and then I'll feel better about their "nugget" eating.

Love your healthy version of nuggets. I think it's awesome that you create recipes that the kids want with a healthier alternative, that's one of the best things that we can do for our kids. This silicone mat is really awesome!
