Simple Beet Burgers Made With Oatmeal

Beet burgers are loaded with flavor and packed with nutrition. These hearty plant-based burgers will satisfy your veggie burger craving.


 Lately, I have been creating plenty of beet recipes as I was blessed with a huge amount of fresh beets. In the past week, I have dehydrated beets, cooked beets, and roasted beets. I also juiced the beets, made beet hummus, and made beet powder. All these recipes will be at the end of this post. So my freezers are filled with roasted beets and beet pulp. I think I may have hit my limit on eating beets.

 So when I picked my final crop from my swingset garden, before the cold front came, I dug up several tiny beets. The beets were about the size of a super ball or smaller. Not wanting to waste food, I cleaned the tiny beets up and cooked them in the microwave. I stuck the cooked beets in the fridge, with my other beet creations. I figured that I would eat them for lunch the next day.

 Earlier that day, I went grocery shopping and was going to buy some plant-based burgers but I passed on them after I saw the price. So I decided to make some homemade veggie burgers at home. While I was gathering up the ingredients for DIY veggie burgers, I remembered the cooked beets that were in the fridge. I knew that the fresh beets would make delicious beet burgers that would be so nutritious.

 These beet burgers are simple to make and are plant-based when made with a vegan egg. I made my beet burgers with eggs but an egg substitute will work in this recipe. The ingredients needed for these meatless burgers are simple and you probably have most of them in your pantry. I used garbanzo beans in my beet burgers but you can use other beans like white navy beans or black beans. Using the darker beans will change the color and taste of the burger.

 These vegan beet burgers also use cooked beets and you can use many types of cooked beets. I prefer using fresh beets in my recipes. I used fresh beets that I cooked in the microwave but oven roasted beets would work too. If you are short on time, check out this simple way to cook beets in the instant pot. If you prefer canned beets, those will also make a delicious beet burger. If you make beet juice, you can even use the beet pulp in beet burgers. Ingredients For Beet Burgers

+  Beans 

+  Beets

+ Oatmeal

+ Walnuts

+ Onion

+ Eggs or egg substitute

+ Spices

 The above ingredients are what I used in my burgers with beets as they give the best flavor and texture to the veggie bugers. While I have used rice in my bean burger recipe for one, I find that oatmeal keeps the vegetarian burgers from falling apart and gives a better chewy texture. I also used chopped walnuts as it has hearty flavor and that is what I had in my pantry. You could use other chopped nuts like cashews. 


Beet Burger Ingredient Swaps

+ Replace the oatmeal with ~ brown rice, white rice or cooked grain of your choice

+ Replace the walnuts with ~ cashews, peanuts, pecans, or other chopped nuts

+ Replace the beets with ~ cooked carrots, cooked turnips, cooked broccoli, or other cooked vegetables


How To Make Beet Burgers

1. Chop the beans and beets 

2. Cook the onion

3. Combine all ingredients to make the beet burgers

4. Form the burgers

5. Bake the burgers

 That is how easy it is to make beet burgers. Once you make this recipe, you will never buy frozen veggie burgers again. Speaking of frozen burgers. These burgers can be frozen after you cook them. So double the recipe and freeze several of the burgers for later. I like to freeze two burgers per freezer bag. Just place a piece of wax paper or parchment paper between the burger patties. You can freeze them for up to 2 months.

These chewy plant-based burgers are perfect for lunch, dinner, or your next cookout. When you freeze these burgers, they are perfect to satisfy your burger cravings or can be made to take with to a cookout. That way you have a vegan option for your meal while everyone else is eating regular burgers.

Simple Beet Burgers

Simple Beet Burgers

Ingredients

  • 1 cup cooked garbanzo beans or white beans
  • 1 cup cooked beets or canned beets
  • 1 medium onion chopped and sauteed
  • 2 eggs or make it plant-based with 2 flax meal eggs
  • 1/2 teaspoon salt
  • 1 teaspoon chopped garlic
  • 1 tablespoon fresh rosemary or 1 teaspoon dried
  • 1 cup oatmeal
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat the oven to 375F and line a baking sheet with a silicone mat or parchment paper.
  2. Chop the cooked beets and the beans in a food processor until in bite-size pieces.
  3. Peel and chop the onion into small pieces. Then saute until cooked.
  4. In a small bowl whisk the eggs. If using flax meal eggs ~ combine 2 tablespoons ground flax meal + 6 tablespoons water. Stir and let sit for 2 minutes.
  5. In a large bowl combine the remaining ingredients. Then add the beet mixture, cooked onions, and eggs. Combine well, adding water, 1 tablespoon at a time, if needed to make the mixture moist enough to form into the burgers.
  6. Scoop out the burger “batter” to form patties; I used a ½ cup measure to make 6 large patties. Use slightly damp hands to flatten and shape the burgers, then place them on the baking sheet.
  7. Bake the burgers in the oven for 20 - 30 minutes until they resemble a soft cookie and are slightly brown on the top.
  8. Serve as desired; leftovers will keep in the fridge for up to 5 days or can be frozen for up to two months.
  9. To freeze the burgers, place 2 cooked burgers with a small square of wax paper between them in a freezer bag
