 Protein powder can be a good way to get the needed protein into your diet. With the high prices of eggs and meat, protein powder can be an affordable option for any type of diet. The problem with protein powder that is made into protein drinks is it can be an unsatisfying option for a meal.  

 Protein drinks lack the excitement of eating, especially when we want to chew out food. While a protein drink may give you protein it can be downright boring. So skip the protein shake for a meal and instead reach for a delicious healthy protein cookie.

That is correct cookies can be made healthy with the addition of protein powder and swapping out ingredients for healthy ingredients.  This healthy dairy-free gluten-free protein cookie recipe is made with healthy ingredients like plant-based protein powder, natural sweeteners, almond meals, and the goodness of oatmeal. 

 You won't find any wheat flour in this recipe or unhealthy sugar in this cookie dough recipe. Chocolate or Vanilla Cookie Batter

 Before you start making the basic cookie dough batter, you need to decide if you want chocolate or vanilla cookie batter. I know that is a hard choice to make as they both sound delicious. Can't decide? Then grab two bowls and make both chocolate and vanilla cookie batter. 


 The different cookie flavors are made by using either vanilla or chocolate protein powder. Make sure to grab a plant-based protein powder that is made with simple clean ingredients like Nuzest. Sugar or natural sugar substitute

 This recipe uses a natural sugar substitute to make the cookies healthier. My choice of natural sweetener is a monk fruit-based sweetener. I like baking with monk fruit as it has no bad aftertaste. If you have a favorite sweetener, feel free to use it in this cookie recipe. If sugar is not an issue for you you can use regular sugar.


So Many Mix-Ins Flavors

 Once you made the cookie dough base, now the fun part happens. It is time to select your cookie dough mix-ins. The mix-ins give the cookie batter unique flavors. Choose your mix-in ingredients wisely and select stir-in ingredients that contain healthy carbs and proteins. Once you decide your additional ingredients to mix into the cookie batter, figure about 1- 2 cups total for each batch of cookies. Nuts make delicious mix-ins as well as seeds, and dried fruits. Looking for more sweetness, then use vegan chocolate chips. I like my flavor combination to be sweet, salty, and crunchy.

Choose Your Mix-ins

~ Vegan Chocolate Chips or Vegan White Chocolate Chips

~ Chopped Nuts ~ peanuts, almonds, cashews pecans

~ Seeds ~ sunflower seeds, sesame seeds

~ Pretzels

~ Dried Fruits ~ raisins, cranberries, cherries

~ Dried Coconut


Fold in The Mix-ins

 Once you have selected your perfect flavor combination of mix-ins, then fold or stir them into the batter. If your cookie batter is too dry after adding the mix in selections, then add some water (one tablespoon at a time) until the batter resembles cookie dough texture. If your batter is too gooey, then add some more oat flour to get the right texture.

Scooping The Cookie Batter onto Cookie Sheets

 Grab your cookie sheets and line them with parchment paper. I love lining my cookie sheets with parchment paper as it not only makes clean-up so easy but it keeps the cookies from burning. Scoop about 3 tablespoons of cookie batter onto the cookie sheets, spacing them 2 inches apart. Then press the tops of the cookie dough down to flatten them. To make the cookies even more delicious, top them with some of your favorite mix-in ingredients. If you like the salty-sweet flavor, sprinkle a tiny bit of coarse sea salt on top. Sea salt is amazing with chocolate ~ think salted chocolate!

Bake and Enjoy!

Place the cookies in a preheated oven at 350 degrees and bake for 10 - 13 minutes or until they are set. Make sure to rotate the cookie pans halfway through the baking time.

Cookie Storage Tips

These cookies are best stored in an airtight container for up to 3 days. If you can't eat the cookies that quickly, you can freeze the uncooked cookie dough mounds to bake when you are craving cookies. To store the cookie dough in the freezer, just prepare the cookies as you were baking them but instead place the cookie sheet in the freezer for a couple of hours. Once the cookies are frozen, transfer them to a freezer bag and store them in the freezer. When the cookie craving hits, place the frozen cookies on a parchment-lined cookie sheet and bake them at 350* for 12 - 16 minutes.
